Chicken Breasts in Caper Cream Sauce

Fabulous!! The only thing I would change for next time is tripling the sauce instead of doubling! I served the chicken over noodles, so maybe that is why I seemed to need more sauce. There was enough for 3 chicken breasts, but not the fourth. Very easy, yet elegant.

Chocolate Torte

I'm surprised any of the frosting made it onto the cake - it was so good I found myself eating it before even frosting the cake!!! I took this to work, and it was a hit. Very tasty, and very pretty.

Tonkatsu - Asian-style Pork Chop

I am now in love with Panko bread crumbs!!! I really didn't think they would make much of a difference, even after reading the other reviews, but, WOW!! They are so light, airy, and crunchy - so much better than regular bread crumbs! This recipe over all was good, but I do think that it is missing a little bit of something. I served the pork chops with sweet and sour sauce, which complimented them nicely, but it would have been nice to have a little more flavor in the actual pork chops so the sauce wouldn't be necessary. My husband said to definitely keep this recipe around!

Red Skinned Potato Salad

One of the best potato salads I have had!! I loved the addition of the bacon. I did substitute about 1/4 c. of mayo with mustard, but that was the only change I made. Delish!

Chocolate Covered Strawberries

This is an excellent and easy recipe. I didn't have a double boiler, but I just used a regular saucepan and made sure I was constantly stirring to avoid scorching the chocolate. Also, I added 2 tablespoons of Nutella to the chocolate for an even more delicious hazelnut flavour. For Valentine's day, I made these for my husband and added valentine's heart sprinkles to the chocolate before it hardened.

Grilled Mahi Mahi

I'm going against the majority on this one - this wasn't one of my favorites. The word that came to my mind was "interesting." I didn't cook it on the grill - but in the oven at 375 for about 30 minutes. The fish was done perfectly, but the toppings didn't go all that well to me. I did forget to put the cheese on top, but then again, I don't think I have ever put cheese on my fish! I probably won't try this again.

Cream of Tomato Soup with Pesto

I liked this - my husband did not. I think he liked the taste of it, but the texture turned him off because it's not as smooth and creamy as canned soup. I really liked the addition of the pesto. I will probably just do canned soup next time because of it's simplicity and just add pesto to it, and maybe some half & half. I did add the pesto to the whole pot instead of individual servings, but served each bowl with a bit of freshly grated Parmesan cheese.

Breaded Brussels Sprouts

This was good, but I had to add extra breadcrumbs and cheese to the top. There wasn't really enough to coat the brussel sprouts. I still like brussel sprouts and butter the best.

Split Pea Soup

Really yummy! The only thing I changed was substituting some of the water with chicken broth because I had some I needed to use up. Next time I would put in more peas, it didn't seem to have quite enough to me.

French Toast Souffle

Made this for a baby shower and everyone liked it. I thought it was ok. My biggest complaint was that it took longer than the 30 minutes to cook - probably about 45 and I was afraid that it was still too eggy in the middle. But it disappeared from the table, so everyone else liked it!!

Marinated Grilled Shrimp

This was pretty good, we ate all of the shrimp, but nothing really outstanding to me. I followed the recipe except for substituting dried basil for fresh. Maybe the fresh basil would have made all of the difference.

5+++++ I can't get enough of this recipe!! We had this last night on salmon, and couldn't stop thinking of everything it would be good on. It made way too much for just 2 people, but we will be eating it until it's gone, I'm sure. I had it today for lunch with some leftover chicken breasts and it was fabulous. Will be having it on hamburgers this weekend. I followed the recipe exactly.

German Chocolate Pie

This tasted good, but didn't set up very well. The chocolate layer is very rich, but I liked it. I cooked it longer than called for, but it was still a bit runny. I will try it again though!

Asian Chicken Salad

Really yummy! I just used chicken breasts (marinated in teriyaki sauce for about 20 minutes). I also added mandarin oranges. I substituted chow mein noodles for the rice noodles. The dressing was fantastic!! Definitely leaving this one in my recipe box!

Salmon Fillets with Creamy Dill

This is up in the running for one of my favorite salmon recipes. My husband could not stop talking about it. I followed the recipe exactly except for not using all of the mixture on top of the salmon. I used the extra to serve on the side for dipping as another had suggested. Super easy - the prep time is only about 5 minutes. A perfect meal!

Kentucky Biscuits

So easy and so tasty! I didn't think these were heavy at all. I didn't knead for 2 minutes - just long enough to incorporate everything together. These are easy enough to make at the last minute. Way better than bisquick, and almost just as fast!
