Slow Cooker Maple Country Style Ribs

This was a great recipe that tasted like one I fix in the oven with apples or pears and apple juice. I might add some fruit to the slow cooker for the last hour or so (sliced pears or apples) and if I wanted a gravy (not necessary!) I could take the drippings and make a cornstarch gravy. Thanks, my family loved it!

Empanadas

These were very good the second time because I did have trouble with the stickiness of the dough the first time I tried this recipe. I went ahead and made them immediately this time without refrigerating. I used homemade apricot preserves and the dough turned out flaky and tasty.

Salsafied Chicken and Rice

Sweet Potato Souffle III

Sun-Dried Tomato Basil Orzo

Yummy! I ended up using mini shells instead of orzo because my grocery store didn't have any, but this was super tasty! My husband preferred it warm, right after it was made, but I liked it both cold and warm. I was making it for a family get together, so I doubled the amount of pasta but tripled the other ingredients. I made it in a blender because I don't have a food processor and it worked great!

Curried Coconut Chicken

This was very tasty! I only used about 1 lb. of chicken, and it was plenty. I also cut the sugar in half. It wasn't really coconutty - but it was still very good! Mine wasn't spicy at all - I'll probably add something next time to make it spicy.

Banana Chocolate Chip Cookies

These were a nice change from banana bread or muffins. I changed the white sugar to brown, and cut back on the chocolate chips by about a half a cup. I wish I would have used mini chips instead. A good cookie-more cake like than a normal cookie.

Breadsticks with Parmesan Butter

These were excellent. I, too, had to add more flour. I tried to work with it as is, but it was way too sticky to knead. I probably added an extra cup of flour, but they turned out wonderful! Just what I was looking for! I brushed the parmesan butter on the breadsticks as soon as they came out of the oven. The only thing I don't like is that this recipe can't be halved easily. This makes a ton of breadsticks!

Apple Crisp III

Try adding 1/4 tsp of pumpkin pie spice to the topping. It gives it a lot more flavor! Also, I used grapples. They are a new grape flavored apple you can get at wal-mart and any other grocer. It was delicious!

YUMM!! This was fantastic. I halved the recipe and still probably got 6 servings out of it - so if you are making the whole recipe, be prepared for a lot! I used half cream and half milk to cut down on the calories, and mixed in a little bit of flour to the milk before adding to make sure it would thicken up. It was very fast and very tasty!

Fish Tacos

I have had this recipe in my recipe box forever to try - I wish I would have tried it earlier!! The batter is perfect - I wouldn't change a thing!! We made some substitutions for the dressing with what we had on hand, but it was very tasty! I'm keeping this one on hand!

Cheddar Beef Enchiladas

Yummy!! I loved these - I did substitute regular rice for Spanish rice. I would probably just use regular enchilada sauce next time instead of the soup/salsa mixture. I'm excited that I have an extra pan in my freezer for a day that I don't feel like cooking!!

Disappearing Marshmallow Brownies

Really good!! I couldn't wait to get these out of the oven because they smelled so good! While they tasted good warm, they tasted even better the next day when they were completely cooled. They were a little messy warm as well, but cut nicely the next day. Very rich, so a glass of milk is a must!

Beef Teriyaki

Definitely more of a beef and broccoli recipe than beef teriyaki. I doubled the sauce, and it was perfect. The biggest change I would make would be to add more cornstarch so the sauce would thicken quicker so the broccoli would keep it's bright, green color. With a few changes, this recipe is wonderful!
