J.P.'s Big Daddy Biscuits

VERY good! We used butter instead of the shortening. I do recommend brushing them with melted salted butter right after taking them out of the oven, and maybe just before baking, too.

boy was this great I added vanilla, blueberries, and oats. But even without all that stuff I added it would still be the best crisp ever.

Creamy Veggie Potato Stew

Reviewed: Nov. 21, 2009
I didn't have high hopes for this, but it actually was pretty good. I do agree that it's a little bland--even after I upped the paprika to 2 tsp. I found that I should have sauteed the onions a little longer than 10 minutes, but if you are good at doing a fine dice (I'm not), then 10 minutes might be fine. Keep a careful eye on the potatoes, carrots and celery while boiling, so the potatoes don't get too mushy. (And try to dice the carrots small so they cook through.) I used white potatoes, which worked well. I think this might benefit from substituting chicken or vegetable broth for the water. I added a European seasoning called Vegeta that I like, and that perked the soup right up.

Excellent! I used Hatch green chile and some sauteed onions, but otherwise followed the recipe exactly. Very warming and comforting for someone suffering from the flu! Thanks for the recipe.

Campbell's® Green Bean Casserole

Reviewed: Nov. 20, 2009
i love green bean casserole but i have never made it the way you're actually supposed to. i tried it for thanksgiving last year and ended up having to throw most of it out because the soy sauce made it taste kind of funny and no one ate it. this year i've decided to try one can cream of mushroom with roasted garlic, one can cream of cheese, and one can regular cream of mushroom. i will omit the soy sauce and opt for fresh herbs for flavor instead. we'll see how it turns out.

Navy Bean Soup I

Reviewed: Nov. 16, 2009
My kids (most of whom are decidedly against beans) liked this!! I only made 1/2 a lb of beans because we usually have a lot left over, and it lasts for weeks. My son had three servings, and some of us ended up a little hungry! Good stuff!

The Best Rolled Sugar Cookies

Reviewed: Nov. 16, 2009
I wanted a sugar cookie recipe that could be used for both roll and drop cookies, and this is it. I actually mixed up about 1/4 of the recipe, scooped and baked for about 10 minutes with out chilling. They have a great flavor!! Make sure you DO NOT USE a non-stick pan, you want the flavor from the golden browned bottoms of the cookie!!

Pasta Fagioli II

Reviewed: Nov. 14, 2009
I disagree that this is too soupy. I did add a larger can of tomato sauce and cut back on the water by a cup. Also added just a bit extra pasta and bacon. But otherwise followed recipe exactly. The best thing about the recipe is that it's pretty easy and you can make it in one pot! I was hesitant to put in too much salt because of the bacon and bouillon cubes, but it definitely needed a fair amount of salt. It also tasted slightly bland, but I added a little hot sauce, and it perked things up just right.

A Good Easy Garlic Chicken

Reviewed: Nov. 9, 2009
Wow! This was great! Usually when I saute chicken I get dry and rubbery, but this really DID come out very moist and tender (and quickly)! For the reviewer who said to use fresh onion and garlic to make the seasoned salt the only salt in the recipe, it IS! Garlic powder and onion powder don't have salt in them. I might cut down a little on the seasoned salt next time, especially if I use prepared chicken broth after I saute it. Homemade (non-salted) broth would be great, and then I added cornstarch and mushrooms and made a sauce. GREAT!

Coconut Muffins

Reviewed: Nov. 9, 2009
I made these this morning. The only thing I changed was applesauce instead of vegetable oil and no butter in the topping. The taste was fine, though a little more coconut extract wouldn't hurt. I was not impressed with the biscuit like muffin. I like my muffins airy. The topping was a great idea however, and I will use that if I ever find a recipe for lighter muffins.

Szechwan Shrimp

This was very simple. I was a little nervous how it would turn out and was left in shock as to how good it was. I did use raw shrimp. I am not a fan of reheating cooked shrimp, it ends up being rubbery.

3-Cheese Pasta Bake

Reviewed: Nov. 5, 2009
I thought for sure my 3 kids ages 7, 4, & 13 months would love this. However my 13 month old was the only one who seemed to really like it. I thought it was fair & so did my husband. I substituted the cream of mushroom with the cheddar cheese soup as suggested by a few others. It would have been helpful to know how much 4 cups was uncooked. (I'd say it was about 2/3 of a 14 oz. box.) I didn't quite have 4 cups, so I had to re-boil my water & make more. Pain, but my mistake.

Chicken Soup

Reviewed: Oct. 12, 2009
I needed a recipe that didn't call for celery, which I'm out of. I already had thighs and legs cooking when I went looking for this recipe, so I used those, and the chicken broth (rather than the water and chicken base). My frozen zucchini was shredded, so I used that (easier to sneak in), and since my son's tummy was upset, I left out the garlic and added seasoned salt. My other son LOVED this as much as I did, and he ate 3 bowls of the stuff!! Thanks for a keeper recipe, this was great!!
