Alaska Salmon Bake with Pecan Crunch Coating

This was a nice change for dinner. I used a large filet of salmon from Costco and used the advice of marinating the fish in the mustard sauce for and hour. I used half Dijon and half spicy brown mustard. and I used lots of pecans for the topping.

Fig and Lemon Chicken

This turned out really tender and juicy and very tasty. I used only about a cup of figs (its what I had on-hand) and I tripled the juice because we like lots of it. I will use this recipe again for sure.

Amy's Cilantro Cream Sauce

I made a triple batch for Super Bowl Sunday and it was awsome. I didnt have Celry salt so I used the leaves from my celery and added salt and it still turned out wonderful. We ate this with chips,Casadillas and Sub sandwichs

Brown Rice and Black Bean Casserole

This turned out better than I thought. I used up some leftover brown rice I had in the frig and I also added a can of corn. I shredded the carrots on the fine part of my grater so they were small and cooked up tender and I cut the zucchini into small strips (hubby isnt a big veggi eater). Other than that I followed the recipe. Very good!

Fluffy Biscuits

This recipe made very good biscuits. The only change I made was using 1/4 shortening and 1/4 butter. The family ate them all up. I will be using this recipe often.

Apricot Pork Chops

This turned out really good. I doubled the recipe making 12 chops. I also took the advise and added 1 chopped onion and 1 sliced bell pepper. I also seasoned the chops with salt and pepper and garlic powder then I browned them in a skillet and tossed everything into my slow cooker for 4 hours. Very tastey and tender, they fell apart.

Wild Rice Soup III

This turned out really good. I doubled the recipe and added a carrot. I also tossed in some leftover rice pilaf I had in the frig. I did have to add some additional broth and milk because it turned out a bit thick. I also used the Uncle Bens rice with seasoning like suggested.

These were perfect as-is. And I like the fact that you can add any kind of seasoning you want to change the flavor a bit. Next time I might add a dash of Creole seasoning for kick.

Quick and Easy Brownies

I made these using the changes of 1 cup flour and 3 eggs. I also topped with semi-sweet chocolate chips and walnuts and cooked for 30 minutes. They were delicious. Just as good as the boxed stuff. This recipe is a keeper.

Amish White Bread

I followed this recipe as directed and it was awsome. I didnt think it was as sweet as some suggested. it was not as sweet as Kings Hawaiian but a litter sweeter than plain white bread. I feel there is no need to adjust this recipe. Its perfect as-is.

Tangy Honey Glazed Ham

This turned out delicious. I didnt have pineapple or Dijon and it still turned out awsome. I cooked my ham covered with tin foil for half the time then I uncovered and added the sugar mixture and started basting for the rest of the time. I also added cherries the last 30 minutes. It was awsome.

Blueberry Crumb Pie

I used frozen bluberries for this recipe and I ended up with soggy pie and crust. I added the cornstartch so I dont know what happened. Maybe Ill try again and see if I can do better.

Sugar Free Sour Cream Linzer Cookies

These turned out good. I didnt want to fuss so instead of rolling them out I just rolled the dough into a log and sliced them into wafers. I didnt even stuff with preserves. We ate them as-is. Very tasty. Just like an almond butter cookie.
