Pumpkin Roll II

Oh boy, just made this for the first time (second time ever trying a roll type dessert). The taste is absolutely immense! The roll did crack in a couple places despite following the recipe to a T, so got 4 stars for that. But the taste is 5 stars for sure! I added a few chocolate chips to the filling and a teaspoon of pumpkin spice instead of the cinnamon. I used self-raising flour instead of all-purpose and therefore did not put in any baking powder. When they say use lots of powdered sugar for it, they really mean it! Definitely a keeper, would like to figure out how to do it without cracking, but as I said, the taste makes up for the cracks. :)

Cindy's Pumpkin Pie

Absolutely amazing! I don't care for pumpkin pie, but I LOVED this one! Taking another reviewers suggestion, I melted the ice cream in the microwave until luke warm. I only used two cups of the melted ice cream. Also, I don't know if my measurements were off, but my two pies came out very thin. Next time I'm going to double the recipe, and make 3 pies out of it instead of 4. I highly recommend this recipe! Went over great @ Thanksgiving and will be making it again for Christmas.

Creamy Vanilla Ice Cream

Oh my goodness! My girlfriend came home with an ice cream freezer she found at Goodwill and wanted to try it out. So off we went to the store to get ingredients for this recipe and came home to our own little test kitchen. We followed the directions exactly, except for one minor change. We drained and added one small can of crushed pineapple to the mix. This was superb. My girlfriend is quite impressed with my kitchen abilities. Again. Our only mistake in doing this recipe is that we didn't double it. It only filled the can about 1/3 of the way up. Next time, we go for a gallon of pure heaven.

Chewy Chocolate Chip Granola Bars

Not sure what we did wrong. Mine came out really undercooked in the middle and didn't have nearly enough "granola" texture-- like grainy chocolate chip cookie dough. Off to keep looking for the right one.

Frozen Greek Yogurt

I have a few modifications that makes this a strong lemony frozen yogurt. I use the entire amount of yogurt in the large carton. mine was 4 cups so I increased the agave syrup to taste. I increased the lemon to an entire lemon. I then zested the entire lemon as well for the extra flavor you get from the natural lemon oils. I love mint so I added about 3-4 more leaves and finely chopped them. I didn't want to drag out my ice cream maker so I poured it back into the original yogurt container and tossed it into the freezer. I'll probably stir it every hour or so until it's firm.

Apple-Glazed Pork Chops

Although I finished the chops in the over (because I thawed more chops than I had skillet space), I found these too be a little too apple-y and sweet. Maybe some more savory seasoning would've cut that down a little, or maybe I just had particularly sweet cider on hand. But I'll probably keep looking.

Satiny Chocolate Glaze

I made this in a glass measuring cup in the microwave and it came out perfect. I microwaved it for about 30 seconds and then stirred in the vanilla. It only needed about 30-45 more seconds in the microwave after that. This was super quick and easy to put on the top of my Chocolate Eclair Cake. Hardens with a nice shiny coat. YUMMY! Thanks.
