This is Big Sky Country. Only Alaska, Texas, and California are larger than Montana; yet only a handful of states have fewer people. So there’s plenty of space in Montana to kick back and contemplate the firmament. In Spanish, the word Montaña means “mountain,” making Montana perhaps the most aptly named state in the Union. The mountainous terrain in western Montana is perfectly breathtaking. Moving toward the east, the terrain levels out into the Great Plains, where millions of bison once roamed, providing a way of life for the Plains Indians. The Treasure State is famous for its natural beauty and outdoor activities, for grizzly bears, and for the Little Bighorn Battlefield National Monument. The cutthroat trout is the official state fish and game meats, including elk and moose, remain important components of many Montanans’ diet.

The change came when I was pregnant and very, very hungry. Now it has been a few years and I think I do pretty fantastically. Sopapilla Cheesecake Dessert

I was looking for a quick dessert, and came across this recipe at another site, really was skeptical about the 3 packages of cream cheese, but I figured, what the heck, can't have to much of a good thing, so tried it, minus the almonds, and was really surprised when it turned out so well. Think next time I will try 2 packages of cream cheese, and dot with some pie filling before putting the top layer of dough on. BTY I found "Crescent Recipe" rolls of dough, that you don't have to close the perforations on, it is all one rectangular piece, perfect fit for the 9x13 pan, just remember NOT to spread the filling all the way to the edge of the dough, leave it just before you reach the side of the pan. Great dessert, and soooo simple!!!!!

Oatmeal Pancakes

Very filling. I used whole wheat flour, and only two tablespoons of butter (all I had left). This recipe could definitely benefit from some salt, as it is just a touch bland, and a little cinnamon never hurt any pancake. A good place to start, though.

Pepperoncini Beef

Very good recipe for sandwiches. As for some of the comments about being to spicy, we sure did not feel this was the case, in fact I was thinking about adding some cayenne pepper to it to heat it up some more. Also, the comment about being dry, sure don't know HOW that happened, we had more than enough juice. Followed the recipe exactly, but did use some beef broth as well as the juice from the peppers. Thanks for the new addition to my collection of GREAT recipes!!!
