Cheddar Cheese Puffs

Reviewed: Mar. 21, 2009
Tonya. This is a SUPER good and EASY recipe!! Thank you SO MUCH!!! I was reading the reviews and I really had to laugh. I guess some people have no clue, the difference between "prepared mustard" and "dry mustard". But oh well, I know the difference and I would not eat these with prepared mustard. The dry mustard gives just the right amount of hot for me and mine. I'll use this recipe always. Again, thank so much.

Guacamole

Reviewed: Mar. 21, 2009
This is a WONDERFUL recipe. I LOVED it. I have read all the reviews and I have noticed that no one said anything about how to get the pit out...I cut my avocado in two, then I take my sharp knife and hit it into the pit and turn sideways and out pops the pit. Then instead of peeling the avocado, I simply spoon it into my bowl. (or) invert the peel and the (ripe) avocado can pop into the bowl too. As to the recipe...I wouldn't change a thing, other than to say, I always put the pits in the bowl when all is mixed up. The lime juice & the pits keep it from turning brown. Works every time also, ALWAYS put leftovers in an air tight container IF, that is, you have any left. Thanks for the wonderful recipe!!!

Tilapia Soft Tacos with Chipotle Cream

Reviewed: Feb. 17, 2009
I'm giving this a 4 because it seems unfair to rate it lower since I didn't follow the recipe. I used mahi mahi instead of tilapia, cayenne instead of cinnamon and corn tortillas instead of the low-carb ones and I topped them with some shredded cabbage, a simple homemade pico de gallo and a squeeze of lime. The tacos themselves were delicious! I plan to make them a lot. What I did make exactly like the recipe was the chipotle cream and I didn't care for it. I liked the spiciness but I didn't care for the smokey flavor of the chipotles. Even a small amount overwhelmed the fish.

Vanilla Milkshake II

Reviewed: Jan. 21, 2009
Back when I was a kid, back in B.C. [ha ha], My cousin and I used to put the ice cream and vanilla extract & 1/2 & 1/2 in a glass and just stir until ready to spoon out. I still love to do this. As you stir it, you get it thick, and toward the end, thin enough to drink. It is still one of my favorite ways to have a shake. Sometimes we would add malt to it. SUPER. Thanks so much.

I adore Vanilla-malt shakes!!! I had no idea that seltzer water was used. I LOVED this one. Mine was a bit runny also, but more ice cream made it perfect. GREAT recipe. Thank you.

Big Soft Ginger Cookies

Reviewed: Dec. 20, 2008
These cookies are wonderful! I added lemon juice instead of water and 1 Tablespoon of crystallized ginger. I didn't bother flattening them. They ended up flattening after I took them out of the oven. Since I enjoy lemon ginger cookies, I decided to try a lemon glaze (1 3/4 c. powdered sugar, 2 Tablespoons melted butter, and 1/4 c. lemon juice). They were wonderful with the glaze as well. But if you enjoy gingersnaps, they are just perfect without the glaze. A family favorite that we will definitely make again!

Tanya's Snickerdoodles

Reviewed: Dec. 20, 2008
My sons and I made these delicious cookies. I haven't been a fan of snickerdoodles in the past, but these are wonderful! The almond and vanilla add a wonderful flavor. They turned out perfectly and my family loved them! It took 10-11 minutes for these cookies to bake. I live at sea level so this may be why it took longer. Putting the dough in the refrigerator for about 1 hour made it easy to work with. After the cookies have cooled, put them in a covered container to keep them soft. If you like them crunchy, cover them with wax paper and leave out overnight. Great recipe! Enjoy!

Icelandic Pepper Cookies

These cookies are the best Christmas cookie I have ever made. Very simple to make, and make the whole house smell like Christmas. While I was making these, my neighbors came over to taste test and said they could smell them when they opened their front door. The recipe makes a lot of cookies so you will have plenty to share.

Chocolate Marshmallow Frosting

Reviewed: Sep. 9, 2008
I found this frosting to be more like a ganache. I was not fluffy and ran off my cake, and puddled around the base. Maybe I did not beat it long enough, I would have beat it longer but I dropped the mixer on the floor and it refused to function again. I do believe the 3/4 cup of conf. sugar is a typo. I used 3 to 4 cups of confectioner's sugar. It had a tiny bit of grittiness, I found the texture to be off putting. Oh well I will try it again and beat the out of it.

Pineapple Biscuits

Reviewed: May 22, 2008
Very quick and easy to make. The only thing I did differently was that I used the foil cupcake liners instead of the greased muffin cups. After 5 minutes of cooling I inverted each of them on a serving tray. I did notice that the biscuit tops got real soggy sitting there on the tray so next time I may leave them in the foil liners until I'm ready to eat them. They were yummy though!

Garlic Cheese Chicken Rollups

Reviewed: Apr. 30, 2008
Last night I wanted to grill out but it was too cold and I had some chicken to use up. I checked out this website my mom told me about and found this recipe. I used crushed corn checks instead of bread crumbs, put fresh spinach leaves on the chicken befor the cheese, and instead of garlic cheese I used fat free cream cheese and added minced garlic, garlic salt and parsley. I had to improvise because I didn't have all the things the recipe called for. My 2 girls LOVED it and so did I. I also would recomend trying a sprayable butter to get the breading to stick because the melted butter would get thick again from the chicken being cold and it fell off when I picked the chicken up to put it in the baking dish.
