Easy Microwave Chocolate Cake

I'm only giving it 4 stars because I did add the 1TB cocoa and 1/2 c. sugar instead of what the recipe calls for. But really moist and made enough for 3 servings for me. Great chocolate fix! Thanks!

Chicken Salad with Bacon, Lettuce and Tomato

Excellent! I used half whole wheat flour and the kids couldn't tell the difference, also low fat sour cream. But of course I had to add chocolate chipes!! Good recipe--thanks!

Pasta and Vegetable Stew

Ramen Noodle Frittata

It was good for an easy meal, but not "let's make more!" material. It was too dry and the seasoning packets added too much salt. I could have let it cook a little bit too long ergo the dryness factor. I added peas, milk, and some mozzerella cheese in the egg mixture then cooked it as directed. I might make it again, but not for a long while.

Good recipe, though I like mine better (my recipe makes way too much for one family dinner and I can't really lessen it easily). For a different texture try using shredded beef instead. I had some Venison roast left-over from Sunday dinner, shredded it and used that instead of ground meat. It saved on cook time too as I didn't have to thaw, then brown any burger.

Vegetable Cheese Soup I

I only gave the original recipe 4 stars, but with a few modifications it is definitely a 5! Instead of processed cheese I used regular colby jack (all I had) and subbed the celery seed for 3 stalks of celery. Delicious!

Blackened Tuna Steaks with Mango Salsa

My husband, who never says WOW about any meals I make, LOVED this tuna. We used ahi tuna steaks from Costco. There were three of them and they were very thick. I made the marinade with a little less garlic and let it sit for about 4 hours because we were out golfing. I used only a pinch of cayenne on one of the steaks because our kids aren't into spicy and left out the garlic powder. Cooked on the grill for about 9 minutes each side (thick steaks and we wanted them a little more done). SOOO good. The kids ate one whole steak themselves and husband couldn't stop raving about how great it was. I made the salsa with pineapple instead of mango. Served with rice, veggies and a fruit salad. Great recipe!

Mexican Whole Wheat Flour Tortillas

This recipe was simply delicious!! Easy to make, easy to follow, and easy to eat! Maybe I shouldnt have given it 5 stars because I didn't follow it exactly, but I did. The only changes I made were to use oil instead of lard and I used about 1/2 the salt.

Quick Chicken Cassoulet with Artichoke and Olives

This was the first time I'd made a cassoulet of any kind. I used cannalini beans. It tasted great, but lacks visual appeal. It was very gray looking, and needs something for color. Otherwise, very tasty.

Hawaiian Wedding Cake I

This was great! I did mine in two 8 inch pans, layered and frosted with cream cheese. Yumm-my. To make it even more Hawaiian-ish, I sprinkled the top with chopped macadamia nuts and toasted coconut. Thanks for a great recipe!

Heavenly Halibut

I am an avid fish-hater, my hubby a fish-lover. I tried this because Halibut is easier on my stomach than most other fish. Most fish makes me sick but this recipe was wonderful! I ate an entire steak! I didn't have green onions so I used chives. I have and will make this recipe over and over again.

Easy Baked Tilapia

This turned out really well. I used a frozen veggie medley that included yellow squash, onion, asparagus, mushrooms and peppers. I melted the butter (probably about 2 TBS instead of tsp), mixed in Old Bay, garlic salt, lemon juice from 1/2 a lemon, and pepper. Brushed both sides of the filets. Then I sprinkled just a dash of lemon pepper and parsley over the fish. Topped each filet with a lemon slice. Spread semi-thawed veggies around the fish, as directed. Baked, covered for about 20 minutes. Didn't have bread crumbs, but crushed about 10 Ritz crackers, mixed in Parmesan cheese. Uncovered fish and sprinkled cracker mix. Baked 10 more minutes. The sweetness of the crackers was perfect for the tartness of the lemon juice and the bit of spice in Old Bay. Served with long grain wild rice and a roll. Thanks for a great meal!

Cheese Sauce Over Cauliflower

I guess I shouldn't really rate it because I made so many changes. But it was so good that my husband and I kept licking it off the spoon! Instead of thyme, I added a dash of mustard powder and a small amount of garlic. I had some leftover half & half, so i added taht to the milk. Served it over steamed broccoli and it was yummy! I would recommend not boiling it for 2 minutes, as it could make your sauce too thick once it cools. Maybe 1 minute? Would also be delicious as a fondue!

Spinach Veggie Casserole

This was delicious! I did need to change it up a little, though. I used cannelini beans in place of the corn, and I always use brown whole grain rice. Also, I didn't have Swiss cheese, so I used mozzerella and a little muenster I had.I topped it with some feta cheese. Extremely flavorful!
