Pita bread is the crust for these single-serving pizzas that get Mediterranean flair from olives, spinach and feta cheese. Breadsticks and a wedge of iceberg lettuce drizzled with salad dressing (pictured above right) make fine pizza partners. Or serve an appetizer of fresh vegetables with dip, then cap off the meal with lemon Italian ice.

This tofu recipe is completely gorgeous. Tofu is soaked in vegetable broth, then breaded with flour, sage, and cayenne, and deep fried. Serve with a relish or a dip of some sort (I love this with plain yogurt mixed with eggplant brinjal). 

Peanut Sauce I

Tamari, vinegar, molasses, cayenne, a bit of hot water, and of course, peanut butter. That 's all you 'll need for this delightful sauce that 's great served over rice or steamed vegetables.
