Chicken Enchiladas I

Grandma's Corn Chowder

This dish is very easy to make and super delicious! My whole family (kids included) thoroughly enjoyed it. I only made 2 minor changes. 1) I used 2 cans creamed corn and 1 can whole kernel corn for extra crunch. 2) I would add the bacon towards the end to keep it from getting soggy. YUMMY!!!!

Potato Bacon Chowder

Very, very good. I'd vote 5 stars but for the fact that I think the results would have been bland made exactly as specified. I didn't use C. of Chix soup because its full of preservatives and artificial flavorings. Instead I used l.o. chicken gravy and sherry. Then I added chives, garlic , nutmeg, and extra salt and pepper. Given those adjustments this is very fine.

Monkey Bread II

I cheated and used Bridgeford frozen dinner rolls, cut into 1/4s. 'Hard to judge the results given that departure, but the family enjoyed them. I used crannies, rather than raisins and if I did so again, I'd soak them first in o.j. to soften them a bit.

Cranberry Pork Chops II

We really did not like this. The pork tasted exceptionally strong, so I wonder if there was something wrong with our pork chops. By itself, the cranberry sauce that the pork simmered in was delicious. I like the taste of cherry or pineapple with pork a lot better.

Easy Pasta Fagioli

I changed things up a bit for my family's tastes and what we had on hand. I sauted about a tsp of minced garlic in oil for about a minute, then I added 2 cans of chicken broth and a little over a cup of meatless spaghetti sauce. I also added some dried basil, pepper, and a couple shakes of dehydrated onion flakes. I let it simmer for a few minutes, then I added 1 can of drained garbanzo beans and ½ can of drained black beans. I pureed the rest of the can of black beans with some of the soup and then stirred it into the soup (it helped to thicken and improve the texture and colour of the soup). I let that simmer for another ten minutes, then I added a couple cups of a frozen pasta-veggie blend (mini bow ties, peas, carrots, corn). Ten minutes later, dinner was done and made extra-tasty with some parmesan. It was very similar to minestrone and quite delicious. Thanks for sharing, Cindy!

Jerky Lover's Jerky - Sweet, Hot and Spicy!

LOVED, LOVED, LOVED it!!! Followed the recipe exactly, but changed the cooking method. We are using elk and have made 6 batches so far. I take the sliced up elk and boil it for about 3 minutes. I then drain it and put it into the marinade immediately and marinate it for 3 hours. And then dehydrate it. It only takes 2 hours to dry this way. EVERYONE in my family loves it. Thanks for sharing!

Ultimate High Altitude Chocolate Chip Cookies

Good Ol' Alabama Sweet Tea

My husband is very appreciative of this recipe. He is from Georgia and loves his sweet tea. I, on the other hand, put almost no sugar in my iced tea... So he asked me to make this for him. I did a half-batch as I don't have a huge pitcher, and I used 3/4 cup sugar instead of a cup. At first he said it wasn't sweet enough, but after it sat in the fridge for an hour or two, he said it was much better. I tried it... and almost went into sugar-shock. And I love my sweets! Well, he can enjoy it, and I'll enjoy my hot tea. :) Thanks for sharing, LoveCats2001!

Chicken 'n' Biscuits

Great! I wanted to do something stew-like for my family, and this was a good choice. I took liberties with the veggies (I used some frozen peas and broccoli, and I used diced fresh carrots) and I used a pound of chicken that I cooked on the stovetop in a little oil and then cubed. I forgot the Parmesan cheese and I omitted the parsley. It was really tasty! I added a little chicken bouillon to the sauce as it needed salt, and to save on dishes I prepared and baked it in a large oven-safe pot. Even better the next day! Thanks for sharing, Marilyn!

Pie Crust IV

Very good. I usually use a different recipe, and I usually use lard. While lard makes for a lighter, flakier pastry, the flavour of lard is usually kind of gamy. I might do a half-lard, half-shortening blend next time, but it was a very good crust for our pumpkin pie. Thanks for sharing, Jan!

Flavor was good, at first, the texture was very hard and crispy though. Nothing soft and chewy. The butter was right out of the fridge when I started mixing not room temp. I may try this again with warmer butter but probably not. They softened as the sat on the counter the next few days and we ended up liking them fairly well.

My Amish Friend's Caramel Corn

My mom couldn't remember the recipe for the caramel corn she usually makes other than it calls for white sugar and not brown. So we tried this one, and OMG this is going to be MY recipe. I loved this recipe, in fact I liked it better than my mothers. Everyone thought it tasted like cracker jacks. I cant wait to make this again. Yummy!

Wonderful....but to make even tastier: Add a tablespoon of dried dill (or more to taste) and omit the half the water and add a quarter cup of dry white wine to dissolve the gelatin. YUMMERS!
