Pumpkin Muffins II

Light and yummy. We used pumpkin pie spice 1 1/2 tsp and added butterscotch and chocolate chips. Kids ate them up and didn't even realize they were eating a relatative healthy muffin.

Slow-Cooked Meat Loaf

I've made this meatloaf for my husband a bunch of times, and I made it for my very picky extended family (ahh..new yorkers..), and they all LOVE it. I took advice after reading reviews, and used a box of stove top (rather than a half a box of some of the bigger stuffing boxes). I also add a little salt and spray the ketchup through out. Sometimes I leave it on low 6 hours, sometimes i do the high for an hour and low for four. If I over cook it, (i have a 2 yr old and to month old so it happens!)I pour beef gravy over the top right before serving. This is the best meatloaf I have tried off of this website!!

Broiled Tilapia Parmesan

Anything that gets my husband and two-year-old son to eat fish deserves five stars, trust me. Very tasty reipe. The only thing I did differently was to substitute a tsp. of lemon pepper for the lemon juice and black pepper, simply because I didn't have any lemons. I doubt it affected the taste much. This one is going in my collection!
