Jamaican Jerked Chicken

This was awesome. I did use it on pork instead of chicken but I did read that Jamaican Jerk is traditionally made with goat or pork rather than chicken anyway. Upon grilling, it takes on a just lovely aroma. We topped it with the Hot Banana Salsa from the website. I liked it--it was fresh and healthy and aromatic. My husband added some hickory chips while grilling. I don't know how much of a difference that really makes. It was yummy.

Hot Banana Salsa

I made this as a topping for some Jamaican Jerk pork skewers that we grilled. It was quite interesting! Two changes only: I used a jalapeno instead, and I used roasted red peppers (in a jar) because I forgot the red bell pepper at the store. People seemed to enjoy it. A fine dice is very important for this salsa. I also recommend adding the bananas and cilantro just before serving, as things tend to get a bit soupy from the acidic lime juice. Thanks for something new and fresh and different.

Pat's Baked Beans

Very popular with my family. Having made this a few times, there are only some small variations that I make. More black pepper required. I use more bacon and I think that garbanzo beans should be replaced by something softer, like maybe butter beans. I really enjoy the different look and texture of the various beans however. I bake the bacon on a foil-lined cookie sheet @ 375 for about 25 minutes or until crispy. Then I set it aside to drain on paper towels and chop it when cool. I use a small amount of the bacon grease to sautee onion and garlic. I have also done the bacon step a day ahead of time and it made the process a little more streamlined. These are well suited for the slow cooker also. About 3 hrs on high should do it!

Honey Grilled Shrimp

This was fantastic! I loved the flavor and taste. I was just looking for a quick marinade to throw together while I finished up some yard work before making dinner, and this was perfect. I used "grill cuts" shrimp, so they were very jumbo, and butterflied, but still had the shells and tails on. They were frozen and raw, so I thawed them under water for a few minutes and threw them in the bag. They cooked for about 8 minutes total and were perfectly done. For the marinade: I didn't use white wine, so I compensated with a tad more oil and a little bit of water. The taste was great!

Seven Layer Taco Dip

Delicious! To start with, I didn't use lettuce, green onions, or peppers, and I didn't use the taco seasoning. I put this in a 2-quart casserole as I planned to bake it. I used the beans for the first layer, then the cream cheese/sour cream mixture for the second layer, homemade guacamole for layer three, diced tomatoes next, then sliced olives, then salsa (I used fresh chunky salsa and drained it well). I covered it entirely in shredded cheddar and baked at 350 for about 35 minutes. It was a total hit with everyone who was there, and I handed out the recipe to a lot of people who tried it. Thanks!

Baked Cod with Boursin Herb Cheese

This was great! It was super easy and delicious. I used Tilapia and sprinkled the Boursin on to save on calories. I didn't use butter, I just sprayed the pan with Pam. It cooked in about 11 minutes. Thanks!

Lemon Tart

This is my absolute favorite pie. It is the perfect balance of texture and tartness. My favorite sour cream to use is Tillamook. My mom has been making this pie for years and she always gets rave reviews. Follow the recipe and put the diced chunks of butter in AFTER it is off heat. The cold butter helps it complete the creamy pudding texture, just like in any homeade pudding method. Thanks for posting!

Pillow-Soft Dinner Rolls

Awesome! Made 24 biggish rolls. I used bread flour. They had a lovely texture and fragrance. I had them on cookie sheets and next time I will rotate the top and bottom half way through cooking for more even coloring. I also put an egg wash on just before baking, which made them glossy and lovely.

Irish Cream Creme Brulee

This turned out excellent! I used a butane torch to broil the sugar and served it with fresh whipped cream (that I added Irish Cream to) and a chocolate clover leaf. Suggestions: Be very careful not to let the liquid get too hot. To test when it is ready, coat the back of a spoon and run a line with your finger down the center. If the line stays, your liquid is hot enough. If it curdles, blend it with a small amount of milk and pour it through a strainer. Also, cook the custard to between 165 & 175 degrees. Any higher and it will separate.

Lime Chicken Soft Tacos

The mixture of red wine vinegar and lime juice is fabulous!! I also added cilantro instead of oregano and also cut the green onions and substituted them with a regular white onion. Still delicious!!! I will be making these again very soon :)!

Caramel Corn Snack Mix

So easy and so yummy!!! I can't get enough of this recipe. I baked the popcorn mix for only 20 minutes otherwise it was a little too crispy for me and tasted burnt. I brought it to a party alongside someone else's no bakes and my dish was empty by the end of the night while the no bakes were still there! I can't believe how easy this was! It's going to definitely be a favorite from now on :)!!!

Chocolate Trifle

Everyone loved this. It was gone by the time we left on Christmas Eve. It was a little sweet for my taste, but it's a crowd pleaser. I used French Vanilla Cool Whip, real whipping cream, toffee bits and caramel. For the chocolate curls, I used mini hershey's bars, a little bit warmer than room temp and shaved the curls off with the carrot peeler. Gorgeous!!! Thanks, this was fun to make. Less annoying than baking myriads of cookies.

Chicken Pot Pie II

I can't believe I haven't been back to review this recipe! It is absolutely the best pot pie I have ever tasted, hands down. I follow the recipe exactly, except at the very end I cook it in a double crust and don't bother brushing it with the beaten egg. Other reviews will agree that this pie takes a lot of time to make, but it is so worth the time. I make two and freeze one for later, then bake it for about an hour the day we want to eat it. Everyone I've made this for goes back for seconds and wants the recipe. Try it - you'll love it!
