Idaho

The Gem State is wedged between Washington and Montana in the Pacific Northwest. Its wide southern border is shared with Nevada and Utah, and it has a short border with British Columbia, Canada, to the north. The Cutthroat trout, and important fish for anglers, is Idaho’s official state fish. Besides wild trout, farmed trout are a big Idaho industry. The huckleberry, native to Idaho, is the state fruit. Huckleberries grow wild in Idaho. To make pies with fresh, wild huckleberries, Idahoans compete with bears for the delicious deep purple berries. Famous for potatoes, Idaho might soon became known for winemaking as well. In March 2007, the Snake River Valley earned designated as an American Viticultural Area, the first such distinction granted to a wine-growing area in Idaho. Incidentally, crisp Rieslings are leading the way in the Snake River Valley – a varietal that pairs wonderfully with fried potatoes!

Lola's Horchata

Never having tried horchata, I had no idea what we were in for. :) I pulsed the uncooked rice in my Magic Bullet chopper for a couple seconds and then soaked it in the 5 cups of water with 2 cinnamon sticks for five hours. I strained out the rice and cinnamon stick (and used it for rice pudding as recommended by another reviewer!), added around 3/4 cup milk, 2 tsp vanilla, and 1/3 cup sugar. It sat in the fridge for another hour or so, and it was great with Mexican Lasagna! It tasted kind of like super-yummy soy milk. I'll make it again, it's a nice change from Kool-Aid or pop! Mexican Lasagna

I mixed the refried beans and spinces in the warm pan with the browned ground beef (it mixed easier as it warmed). I also precooked the noodles and omitted the water in the recipe. I layered as followed: a light layer of salsa on the bottom, noodles, of meat-bean mixture, pepper-jack/monterey jack/mozza cheese mix layer, salsa. I repeated these layers, ending with a layer of noodles. I then topped it with more cheese. I baked it for 45 minutes, let it cool for 10 minutes (solidifies a bit in the pan and allows for easier cutting), and topped each serving with plain sour cream. Oh, it was so good! And even better the next day! Thanks for sharing, Popcklgal!

Banana Peanut Butter Bread

This was super super yummy! I made mini loaves and they were super moist! Cook time was reduced and that was another bonus. I didn't have to wait long! I thought the peanut butter and banana was the perfect compliment to eachother.
