Daddy's Fried Corn and Onions

This is so good!!! I used canned corn though because thats what I had. I also added some shrimp to it that was left over from the night before. Yum!!!!

Zucchini Parmesan

I layered zucchini with breadcrumbs, sauce, and then cheese until I filled an 8x8 pan. I covered it with foil while cooking since I did not precook the zucchini. This was an easy dish. I even ate the leftovers mixed with penne noodles the next day.

So these were really good, but not my favorite I have made from the site. I expected them to be a fuller thicker cookie. But I love trying new things, and these did not disappoint. I used milk chocolate chips, one cup of whole wheat flour (I try to sneak it in whenever I can) and cooked for 15 minutes.

Blueberry Flax Pancakes

Could it get any easier?! My family loves bisquik pancakes, and I like adding flax seed to everything. My family couldn't even tell these were loaded with fiber. This recipe is a keeper and will be making them again, and possibly trying other fruit.

Jordan Marsh Style Blueberry Muffins

These were the first blueberry muffins I have made from scratch, and they were so worth it. I made these exactly as directed, but I did use butter flavored shortening. These muffins were so pretty when I pulled them out the oven. The batter was thick, making this a dense muffin, but it is still good. I will be making these again.

Easy Batter Fruit Cobbler

Followed directions, but pulled out of the oven after 45 minutes since the top and edges were browned. I used 2 cups raspberries and 1 cup blueberries. This is an easy and yummy dessert, I did not have any leftovers. Served warm with vanilla ice cream. This recipe is a keeper. So yummy!

Cherry Cheesecake

This was awesome! Super fast and easy and delicious! I didn't use the cherry pie filling, just made it plain because thats how my husband likes cheesecake. It definitely is not like real cheesecake, but is still very good and you just cant beat how easy it is to make :)

Cheeseburger Meatloaf

This was really good. The whole family loved it. I did add a little worcestershire (sp?) sauce, some season salt, and a little garlic powder. I also only used 1 1/2 lb ground beef and it needed longer than 1 hour to cook. I served this with some corn on the cob and some fried pickles. Awesome :)

No Bake Cookies III

These turned out good. I followed KIRVIN's advice for cooking them in the microwave and it worked fine. The only other thing I did differently was that I poured the whole thing in a 9x13 pan and cut them into squares when cooled. Fast and easy and I didn't have to heat up my house :)

Tuna Piccata Pasta Salad

This was really good...the only changes I made were that I used only about 1/2 of the oil, I added 1 teaspoon of garlic, used a 13 oz can of chicken because I was out of tuna, and I added about 1/2 of a can of great northern beans. I know it sounds like a lot of changes, but not really. I will definitely be trying this with the tuna as stated :) A quick,easy, and cheap meal.

Grandma VanDoren's White Bread

This bread was good but not quite what I had expected. Other reviewers stated that this bread works well with regular self-rising flour but I used it and didn't get what I expected. I will make this again and use the bread flour instead to see what the recipe is really supposed to taste like.

Refreshing Watermelon Salad

I tought this was good. The watermelon I had wasn't that great, a little soft. So I'm sure if I had a better watermelon it would've been much better. Still was good though. I used some fresh basil instead of cilantro because thats what I had and I'm not a huge an of cilantro.

Tilapia Scampi

This. Was. AWESOME!!! Super easy and super good. Only change I made was that I added a couple of glugs of white wine. Also, I didnt flip it at all and only had to cook mine for about 20 minutes. Super good over some angel hair pasta. Yum!!

Quinoa and Black Beans

I like quinoa and black beans, but I really dint care for them mixed. My boyfriend who will eat anything didn't really care for it either. If I make it again I might add less quinoa.
