Army SOS Creamed Ground Beef

This was a good, fast, and cheap dinner which is always nice. Of course it's not something you'd serve to company, but it does the job. The only changes I made were that I used more worcestershire sauce, at least a tablespoon, and I also used some season salt. Wasn't bland at all as some other reviewers had stated. Good for a fast and cheap meal :)

Banana-Zucchini Bread

I guess it's strange to rate this 5 stars when I made so many changes- but it was delicious! I used 4 very ripe bananas, about a 1/2 cup more zucchini, a small handful of freshly ground flax, I added applesauce to make it 1/2 veg oil & 1/2 applesauce... I added about a tablespoon of lecithin for extra nutrition and about 2 Tablespoons of dutch cocoa. Oh, and I omitted 1/2 of the white sugar, because I decided to make a quick butter/sugar/crumb topping before baking. I made them into muffins instead, since I have 6, 4 & 2 year olds & figured they'd rather have "their OWN" muffin than just a slice of bread. I was right! They are SO good and there is no sign of them "tasting" healthy. The kids inhaled them, and 2 of my kids are extremely picky eaters. UPDATE 9/10/09: I just made another batch of muffins. This time I used 5 bananas & almost 2 cups zucchini... they came out perfectly at 20 min, sooo moist & delicious!

Omelet in a Mug

I am so glad I found this recipe! I just put some cheddar and leftover roasted potatoes from the night before in mine. It was awesome...I really want to start making this with different veggies and hopefully become more of a breakfast person! And I'm a huge fan of quick and easy and not dirtying a bunck of dishes ;)

West Coast Cod and Shrimp

O M G...this was soooooo good!!! I did make a few minor changes...I used a can of evaporated milk instead of the cream as suggested by another reviewer, I added some old bay, and I had fully cooked frozen shrimp so I just thawed them and added them to the mix when it was all finished cooking. Oh, and I also used 8 oz. of mushrooms because they needed to get used up and we like mushrooms up in here. And I sauteed them with the onion. The only other thing I did was I did not make the rice, but made biscuits instead and just served this like a seafood biscuits and gravy. YUM!!! Seriously one of the best recipes I've made on here :)

Easy OREO Truffles

I refrigerated the oreo mixture before rolling for 10 minutes, and then put the rolled balls in the freezer for 15 minutes before dipping into white chocolate. Tasted like cookies and cream. Very good.

Beef and Mushroom Stuffed Peppers

My first attempt at making stuffed peppers, in fact I didn't think I liked stuffed peppers... but this recipe proved me wrong. So easy to make, I even cheated and used canned mushrooms and omitted the onions and this still turned out great. I did season the meat for extra flavor, and for the gravy I made The Simplest Beef Gravy from this site and I was impressed. This recipe is a keeper.

This was great! I halved the recipe and made one big loaf. I also used honey instead of sugar and 1/2 white whole wheat flour for the flour. Yum! This will be awesome for sandwiches :)

Pineapple Coconut Zucchini Bread

This is some really good zucchini bread! I didn't drain the pineapple that great so mine was SUPER moist, a little too moist, but that was my fault. The flavor though, is awesome. I was out of pumpkin pie spice so I just used 1/2 teaspoon each nutmeg and ginger. My kids loved it too :)

Sticky Monkey Brains

I used one package of generic, cheap biscuits for this recipe and cut each biscuit into 6 pieces. Tossed and coated in a zip-loc and then placed in a muffin pan. Made 6 muffin sized monkey brains. This was so easy, and was yummy. This is a no-brainer:) and a keeper.

Brownie Batter + Cupcake = The SECOND BEST Cupcake. Ever

How could you go wrong with these. So easy, and yummy. My brownies had a hard time pulling away from the paper cups so I try using a better liner, but they still tasted great. I didn't even frost mine. Ate them plain.

This. is. AWESOME!!! Super easy and sooo good! I just put the chicken in a ziplock bag, threw in the taco seasoning, and shook it up to coat. Worked like a charm ;)

Blonde Brownies I

First time making, but the 2nd time tasting a blonde brownie, and these did not disappoint. The only changes I made where I used bread flour in place of all purpose to make a chewier brownie. Oh it was so worth it, I was out of chocolate chips so I sprinkled cinnamon chips on top. They were delish, I think I will skip the chocolate chips all together. I only baked them for 20 minutes since I like my brownies more fudge-like. Would be perfect topped with a scoop of vanilla ice cream and drizzled with caramel. A keeper recipe for sure.

Yellow Squash Patties

I hardly give negative reviews, but the flavor of these was not worth the effort. Shredding, mixing, sticky hands, dirty griddle, dirty food processor... ugh...These were messy to make IMO and they tasted like they were nothing but flour mixed with veggies. I did not use cheddar cheese since I didn't have that on hand, but I did use a flavored Jack cheese. I was saddened to waste an expensive locally made cheese on this recipe that had great reviews. I enjoy trying new things, but sadly I will not be making these again.

Baked Zucchini Chips

OMG... what a great healthy way to have zucchini as opposed to the deep fried kind. I used one egg since I didn't feel like wasting the yolk. I added some flax to the breadcrumbs mixture to help add fiber and bind them better. I also added a little garlic powder after reading some other reviews. I also cut my zucchini thin so that way they would be crunchier. Good recipe!

Downeast Maine Pumpkin Bread

This was awesome!!! I used about half brown sugar for the sugar and made two bigger loaves instead of three small ones and I added chocolate chips to one. YUM! My go to pumpkin bread from now on :)
