About me:
I am a newly wed. My husband and I got married in June 2005. My husband works and I am able to stay home and get stuff done around the house. I have been able to experiment with lots of different cooking. When I was younger my mother didn't allow me to cook we always went out or heated something that was pre-made in the oven. Now that I am on my own I have had fun cooking and experimenting with all types of food. My husbands favorite is my enchilada ring.

Lola's Horchata

Reviewed on May 8, 2008 by Duckball
Never having tried horchata, I had no idea what we were in for. :) I pulsed the uncooked rice in my Magic Bullet chopper for a couple seconds and then soaked it in the 5 cups of water with 2 cinnamon sticks for five hours. I strained out the rice and cinnamon stick (and used it for rice pudding as recommended by another reviewer!), added around 3/4 cup milk, 2 tsp vanilla, and 1/3 cup sugar. It sat in the fridge for another hour or so, and it was great with Mexican Lasagna! It tasted kind of like super-yummy soy milk. I'll make it again, it's a nice change from Kool-Aid or pop! Thanks for sharing, Lola!

Mexican Lasagna

Reviewed on May 8, 2008 by Duckball
I mixed the refried beans and spinces in the warm pan with the browned ground beef (it mixed easier as it warmed). I also precooked the noodles and omitted the water in the recipe. I layered as followed: a light layer of salsa on the bottom, noodles, of meat-bean mixture, pepper-jack/monterey jack/mozza cheese mix layer, salsa. I repeated these layers, ending with a layer of noodles. I then topped it with more cheese. I baked it for 45 minutes, let it cool for 10 minutes (solidifies a bit in the pan and allows for easier cutting), and topped each serving with plain sour cream. Oh, it was so good! And even better the next day! Thanks for sharing, Popcklgal!
