Black Bean and Salsa Soup

This is one of those "I'll-never-tell" recipes. People think that you slaved to make it, but in reality it only takes about 5 minutes to prepare, and 10 minutes to fill your home with an amazing smell that makes people think you've been slaving away in the kitchen. Serve with the Mexican cornbread!

Apple Enchilada Dessert

These were pretty good, but very sweet. The second time that I made them I added cotija (Mexican) cheese in order to add a bit of salt and cut out some of the sweetness. I liked it much better the second time around.

Cottage Cheese Chicken Enchiladas

Wow! I never thought to use cottage cheese! My friends and I had a "girl's weekend getaway", and women who in their normal lives daintily pick at food looked like they were forming a rugby scrum around these enchiladas! I made one substitution: cotija (Mexican) cheese for the Monterrey Jack. THANK YOU for a great recipe!

Wow--delicious! For those who question the authenticity I can only say that I've travelled through Africa, and the place is huge! If you don't get the same BBQ from one Southern town to another in the U.S., why would a West African recipe taste exactly like what you've had?

Baked Honey Mustard Chicken

Garlicky Beet Delight

Let me first say that I am not a big fan of beets. BUT...this actually made them o.k., and my husband really loved them. I took your advice to add more garlic {selfishly I thought it would overpower the beet flavor}, and it created a nice taste combination. Thanks for a beet recipe that I can live with and my husband just adores.

Chicken Breasts With Herb Basting Sauce

I disagree with the folks who thought that the chicken turned out dry. Ours not only turned out very moist, but also DELICIOUS. I upped the herbs a little bit, as I want my herbed chicken to be almost green with them. Thanks for a GREAT and SIMPLE recipe.

Pork, Cashew, and Green Bean Stir-Fry

This tasted WONDERFUL, but was pretty short on sauce. Like other reviewers I marinated the meat in the soy/cornstarch mixture all day, and the pork was tender and very tasty. We really enjoyed the texture of the pork and green beans together. I would just suggest to others to make more sauce--while the meat was tender, the dish overall was a bit dry when paired with rice.

Steak Salad

Rhubarb Muffins

Mmmmm!!! I followed the whole-wheat flour suggestion (substituting the full amount of all-purpose for whole wheat flour) for a healthier kick. Also added about five blueberries to each muffin after the batter had been spooned into the tin, and before the topping was added.

Gypsy Chicken Stew

I have to admit that I was dubious about using so much sherry (especially in combination with the chile peppers), but this was really wonderful! The broth had a great depth to it. Given the high fat, sodium, and calorie content, though, we gave it four out of five stars. A good one for those indulgent days.

Lumpia (Shanghai version)

Deeeeeeeeeeeeeeelicious! We followed the suggestions of using just pork and eliminating the salt. Also, we used about 4 tbsp of filling per wrapper (enormous lumpia!) in order to use all the filling with just one package of wrappers. Very tasty, and thanks!
