Sopapilla Cheesecake Pie

This recipe is really good and easy. They kind of reminded me of cream cheese danishes. Next time I will leave some sugar and cinnamon mix to top with after it cools!

I have to agree that this is not really a "recipe". It is good basic instructions for a beginner or a quick dinner on a weeknight when you're tired but there isn't anything incredibly unique here.

Rum-Spiked Horchata

I really liked this drink (other then adding chocolate to it this is the only way you would get me to drink milk!). I would advise against trying to double the recipe because it's a lot of work!

Crispy Rosemary Chicken and Fries

So if you are thinking what I was thinking when I originally saw this recipe you thought... potatoes and chicken with the same seasoning? Eh it might be too much of a good thing... but it wasn't! Very good quick meal I can even have the boyfriend make on his own. :)

Chorizo Stuffed Bell Peppers

These were alright. I don't know that they are worth all the work that is put into them though. I altered the recipe slightly using half ground beef and half chorizo which I think was okay. Even if I had used solely chorizo I think the recipe would still be lacking a lot in the flavor department because I think a lot of it is lost when you drain the meat after cooking it. I had to go heavy on the salt and pepper.

Chili Sauce Chicken

This chicken was very good, but it was more sweet then spice. I was expecting more spicy since it uses chili sauce... it's a nice alternative to the traditional BBQ chicken for a cookout.

Simple Southwestern Chicken Salad

I made this as directed with no substitutes or add-ins on wheat bread. It was pretty good, next time I think I will lessen the amount of taco seasoning because it seemed slightly salty for our taste.

Feta and Bacon Stuffed Chicken with Onion Mashed Potatoes

I liked this recipe, but my husband thought there was way too much feta cheese in it, which overpowered everything else. I might try this again, using 1/2 of the feta cheese. It was easy to make though, and if you like feta, you'll love this recipe!
