Bean Relish

I have to say that never actually having had Boston bean relish in Boston I am certainly no expert. I have had a version of bean relish at a local restaurant which makes it with a much more milky sauce and less relish. I really liked the flavor in this dish, but I think next time I will make modifications to use less relish out of personal preference.

Chilaquiles III

I modified this slightly to make it a bit more healthy. Cooked the tortillas in a few spritzes of cooking spray instead of frying. I only used one full egg and the rest were just egg whites. Very good healthy breakfast! Thanks.

Hominy Beef Bake

I used Firehouse chili and Fritos corn chips for this recipe. It was pretty good, not as spicy as I was expecting it to be. I did top with a little bit of mild cheddar cheese just before serving. If I make this recipe again I would probably only make it using homemade chili because I think it would be just that much better. Also, I only used half of the water that the recipe calls for, and I still feel it was a little runnier then I would have liked it to be. My suggestion would be to forgo the water addition depending on what kind of chili you are using. If you use the full amount of water in this recipe you will have very soggy chips.

Chocolate Torte

I am only reviewing the cake; I did not do the frosting. I live at almost 6,000 ft elevation and I was worried that this cake wasn't going to turn out because I had forgotten to make adjustments before mixing the dry ingredients together. The only change I made was to cook at 350 for 12.5 minutes and then increase the temp to 375 for the last 12.5 minutes. The cakes came out just fine, and my toothpick was clean at the end of the 25 minutes. So you don't really need to make any adjustments to the recipe unless you live higher then I do. The cake was moist and very chocolately. I did half dark chocolate cocoa and half milk chocolate cocoa and I think its just right! I will definitely make this again. Next time I may experiment with the ingredients to try and make it a bit more healthy.

Balsamic Chicken and Pasta

I adjusted the serving size on this meal for two. My boyfriend really enjoyed it. The only addition I made was some finely sliced red onion. I couldn't believe he actually ate the tomatoes, he's a very picky eater and hates veggies but since they had marinated in the vinegar and oil he gobbled them up! I didn't use the second half of the oil and vinegar addition to cut down on the calories. I will make this again.

Slow Cooker Chicken Stroganoff

Generally I'm very against reviewing something I didn't make exactly, but after looking at all the reviews for this one, I see that most everyone who actually rated it high didn't follow the recipe exactly. I thought this might be a good dish to make one night but didn't have time to do the slow cooker thing so decided I'd do it on the stovetop. I don't know if it was just the way I was cooking it or what but the sauce was very concentrated. I had halved the Italian Seasoning and the Cream Cheese in the recipe but did use all the Cream of Chicken soup. When everything was said and done I ended up adding about 1/2 cup of milk to it in order to get it saucy. I do have to say that the flavor isn't really anything comparable to other stroganoff's I've had, beef aside. I will probably make this again, but next time I attempt to make it a little more 'stroganoffy' in flavor. My boyfriend said it tasted like it was missing something. I shudder at the idea of how this would have turned out had I followed the recipe entirely... flavor-wise.

Ratatouille Bake

This is a pretty good recipe and very healthy but I felt like it was missing something. Next time I will probably change the kind of tomatoes I use or add a tiny bit of regular spaghetti sauce. I used fresh herbs, so I don't know maybe that was my problem but I didn't feel as though there was as much flavor as I would have expected even after increasing the pepper.

Bacon Ranch Pasta Salad

I didn't make any changes to the dressing on this, only the additions... I halved grape tomatoes, didn't add the cheese, used turkey bacon instead of regular, and added green onions to it. You might think that I shouldn't even be rating this recipe with all the modifications I made to what was in it, but the fact of the matter is that I didn't change the dressing flavor at all... and it was very good. I am so glad I found something other then Suddenly Salad to make for the picky boyfriend! Also, I noticed that the Tblsp of ranch dressing is what was in the packet of Hidden Valley so next time I won't meaure it out. Thanks Wilemon!

English Royalty Chocolate Chip Scones

Since I didn't read other posting before I made this, I noticed right away after completing the ingredients that this recipe was written poorly because of the consistancy. I ended up with 7 Tblsp of butter and 7 Tblsp of OJ before I felt it was right. Kind of wish the submitter would have written this properly or at least had it edited by AR because had I known these were going to require so much more butter I probably wouldn't have made them. So don't trust the nutritional information on this, because it will be off. Anyways... other then that these were pretty good. I'd make them again or more often if they weren't so bad for me!
