Pork Chop Casserole II

My family did not like this recipe at all, which is strange because they are quite adventurous when it comes to trying new things. The sauce made from the soup and mayo was too thick (if I ever made it again, which I have been requested NOT to do, I would add a little milk). The crunchy topping was interesting and a good idea, but I would cut back on the seasonings a bit as we found it to be too salty. Unfortunately, this recipe was a bust for us...we all ended up eating Cheerios for dinner instead.

Black Bean and Salsa Soup

So great! I love how simple and healthy this is, and it was delicious too. I added some jalapeno slices before blending, and corn while heating it up. I'll be making this frequently!

Fluffy White Frosting

This was really good! I used it as frosting for ice cream cone cupcakes (cupcakes baked in actual ice cream cone cups). It was very light and airy, shiny, and marshmallowy. I followed the recipe exactly and made sure to whip it a lot!

Easy Biscuits

Fluffy Peanut Butter Frosting

Super great! I followed the recipe exactly, even though some reviews said to change the amounts. I just made sure the butter was room temperature and whipped it like crazy with the peanut butter. I put it on top of brownies I made in a mini-muffin pan and they were spectacular!

Roasted Rack of Lamb

My husband is Greek, so he grew up eating lamb all the time. I had never cooked it before and decided to try this recipe. My mother-in-law must have been so green with envy when my husband told her it was absolutely the best lamb he had ever had!

Jalapeno Popper Spread

Easy Devonshire Cream

Wow! The pork was so juicy and tender thanks to the oven bag, and it was so flavorful! Everyone, including my five kids, told me this was a keeper. It's almost impossible to find something that everyone likes, but this is it!

Better Cheddar Chicken

I would give this recipe 4 1/2 stars. I liked the way the top of the breasts crunched up, but the bottom was a little mushy, even though I flipped them halfway through. I doubled the amount of creole seasoning I used, which added a nice kick, but next time I will halve the butter and add an equal amount of mayonnaise to the mix before coating. I think that will give it an extra zing. I baked mine on a cookie sheet, and 40 minutes was perfect for juicy boneless, skinless breasts.

I gave this recipe 5 stars, but it was probably more like 4 1/2. Everyone in the family absolutely loved it. I did add onions to the mushroom saute, and that added a little more flavor. Next time I will add some red peppers or maybe some diced tomatoes just to give it a little something extra. I will definitely be making it again soon!
