Pumpkin Chocolate Chip Cookies I

Reviewed: Oct. 25, 2007
I've been making these type of cookies for years and they're always a favorite of my kids...I don't care for the pumpkin chocolate combo so I substitute the chocolate chips for cinnamon baking chips...the combination is perfect and much better than the chocolate!

This recipe is delicious! I thought the sauerkraut would be overwhelming but it has a really nice balance. I prepared exactly as directed and it wasn't dry on the top as others had noted! Yummy!

French Toast Casserole

This recipe is my husbands favorite. This recipe is so simple and delicious. Try using croisants in place of the bread for a buttery and even better tasting breakfast. I love bread pudding and this is nearly the same thing with a twist.

Avocado and Tomato Salad

Reviewed: Apr. 24, 2007
I made this salad for a company BBQ that was desparate for some healthy veggies! I omitted the onions and mixed in about 1/4 cup olive oil and vinegar dressing into the mixture. I topped a bed of baby spinach with the tomato/avocado mix; and spread croutons around the plate. It looked great and was gone in a flash!

Empanadas

Reviewed: Mar. 19, 2007
I used pie-filling peaches from a can for the filling. I cut them up into much tinier pieces, and the end result was great! I got a little frustrated while constructing the empanadas, but that was probably my fault for not working with properly chilled dough. I used to buy these all the time mexican tiendas down in Tucson, and I have to say that pumpkin and tres leches filled are the best!

I made these for a wedding shower, and they were gone in 15 minutes! I cut the string cheese in half to double the recipe and cut down on the serving sizes. I forgot to add the garlic; but I don't think anyone minded.

Gyoza

When I started making these, I knew it was going to take a long time because I doubled the recipe but after my first bit I knew it was worth it! These are wonderful, I also added 2 tsp of fresh Ginger and used green onions. Next time I think I will use chopped shrimp instead of pork and I will use Eggroll wrappers to make the prep time go faster but an exellent recipe all loved it!!!

I'm glad I tried this recipe, it was very tasty. Although, I'll have to agree with other members about the incorrect cooking time and temperature. The first time I made this it burned a little. On the second try I reduced the cooking temp. to med low, and it came out much better.

My family loves these. I usually make a few small changes though. I increase the baking powder just a bit and use 2 T. powdered sugar ILO white sugar it seems to mix in better and have a better taste.
