Blueberry Pie

I followed the recipe exactly against my better judgement...I live at altitude and love to bake and cook and usually do fine when I adjust recipes but I didn't. This looked awesome and smelled awesome but all I got was blueberry soup. I learned a trick a while back that I should have used...dried cranberries add tartness and also help suck up the excess moisture. Won't be making this again.

Refrigerator Bran Muffins

I wanted to make tasty bran muffins and I had a box of All Bran on hand, so I combined 2 recipes on this site and came up with super muffins. I started w/ 3c.of All Bran, moistened w/ 3c. of boiling water. I let that sit while I combined the eggs, oil, buttermilk and sugar. I sifted into that mix, 1 1/2c. whole wheat flour and 1 1/2c. white flour w/ 6t. baking soda and 1t. salt. I added 3c. of Raisin Bran to this mix and then poured in the moistened All Bran and over 2c. raisins. I'm baking them in a muffin top pan for 14-15min. They are really light and tasty--very different than the leaden bran muffins that I've often been served. I also made some light honey butter w/ cinnamon which really makes them outstanding.

Chunky Applesauce

I liked this recipe, but did make a few alterations. I used more apples, but less sugar. I used Splenda 1/2 and 1/2 brown sugar, the same amount of vanilla and a bit more cinnamon. I didn't peel the apples (Jonathon) and the skins gave it a pretty rosy color. I also added a couple handsful of Craisins.I thickened the juice with cornstarch just before I took it off the stove. It was more like apple pie filling than applesauce. Very good.

Easy Blender Salsa

I give this 5 stars! Great base Salsa! You can add or subtract to suite your own taste. I added chilies, roasted red peppers, and garlic to mine, but that's just MY taste. Kudos To You!

Turkey Brine

This was wonderful, I did do something most people don't. I cooked the bird on the grill (in a heavy duty foil pan) Upside down (the legs and breast on the bottom) This brings all the juices to the breast and legs. The breast meat just fell apart when I carved it, the flavor was wonderful.

Zucchini Bread II

I'm always looking for ways to make recipes healthier, so I used 1/4c. oil and 1/2c. unsweetened applesauce. I substitued 1 c. of whole wheat flour for one of the white, and 2/3c. Splenda brown sugar, along with 1c. brown sugar. I baked it in a muffin top pan so that they could be individually wrapped and frozen for snacks or put in a lunch box. It yielded 18 muffins, which baked at 325 for 17 minutes. They're delicious!

Tangy Barbeque Pizza

This could easily be turned into a Chicken Santa Fe Pizza! :) Just replace the diced tomatoes with some chunky salsa (drained), and sprinkle with cumin. Now you made me hungry!

Pesto Sauce

My husband and I just finished a fabulous plate of pasta--followed the recipe exactly except for 3 cloves of garlic rather than 4. Because it's just the two of us now, I froze the rest of it in ice cube trays so that I can thaw just what we need. Truly the taste of summer!

Homemade Wine

I have to say this is SUCH a quick and easy wine recipe! The way I do it is to poor in 2 cups of sugar, add yeast, poor in the other 2 cups of sugar, then add the concentrate, filling the jug half way. I then lightly shake the jug to help dissolve some of the sugar. When the mix is well dissolved, I finish filling the jug. I then use the balloon and rubber band, using a needle to poke a small hole in the top of the balloon. After 5 weeks, I filter the wine, and put it in a glass jug. I put a new balloon and rubber band around the top, and put it back in the closet for 1 more week. After 1 week, I filter the wine 1 last time, put it in a new glass jug, and it's ready. I've tried grape, white, white/raspberry, apple, white peach, apple/kiwi/strawberry, apple/peach, and quite a few others. I have to say though, the apple will put you on your rear end! LOL My favorite so far is the white/raspberry.

Baked Parmesan Perch

Crab Crusted Grouper

Phyllo Turnovers with Shrimp and Ricotta Filling

I have never used phyllo before and even so this recipe turned out perfect. I thought it would need a dipping sauce but they were wonderful without it, all the ingredients complimented each other so well that it dd not need sauce. This will be made again and again, I think it would even be great on crackers!

Best Beef and Broccoli

so yummy, quick and easy to make! i would definitely reccommend serving over rice because there is a lot of sauce that needs to be soaked up. also, the meat comes out kind of tough, so next time i will have to find a way to tenderize it a bit more. overall an AWESOME meal that everyone is sure to love!
