Orzo with Parmesan and Basil

It was good, not great. I didn't have fresh basil so I left it out (suggestion of recipe submitter). I'll try it again with fresh basil to see how much of a difference that makes.

Cranberry-Pumpkin Cookies

I absolutely love these cookies! The only addition I made was in the spice department. I added ground ginger, cloves, nutmeg, cardamom, & allspice! Next time I will try adding some oats! Great recipe! Thanks!

Coconut Bread Pudding

This was good, very sweet. I found it somewhat dry and not hugely flavorful so I made the "Rum Sauce" also found on this site to serve with it. (much better) Bread pudding has so many variables, mainly the bread. If it's fresh it needs less liquid, dry it needs more so it requires a few attempts to know the consistancy it should have to master any bread pudding recipe. Mine wound up a little on the dry side so I added more milk and sent it back to the oven for an additional 20 minutes or so to absorb the milk. I estimated the amount of bread so that could have been my fault. I also added some raisins and macadamia nuts. The rest I did according to the author. I probably would not make this again but if I did I would use less coconut and less sugar.

Whole Wheat Sweet Potato Muffins

I had a can of sweet potatoes I was itching to use up and found this recipe. I had no idea how much to use so I used 3/4 of the 15 oz can. It seemed to be just right. I used 1/4 cup Agave sweetener plus a few more squirts after checking the batter. I have a huge sweet tooth and I could stand to have these sweeter but then again they are still tasty. I didn't want to bust out the blender so I just did the sugar and oats and cinnamon for the topping added a little melted butter to make them stick. I can't wait to have an extra sweet potato laying around. I am making these again!

Curried Butternut Squash and Pear Soup

This was definitely a good soup and will probably make it again. I did as one reviewer suggested and added a half teaspoon of brown sugar and a pinch of nutmet and cinnnamon. I am not sure that this added anything more to the recipe, but nonetheless, this turned out to be a good soup.

Egg Free Chocolate Chip Pumpkin Cookies

These are some of the best cookies I have ever made, egg-free or otherwise!!! I used a cup of butter instead of shortening, used mini chocolate chips and added nutmeg as well (I love nutmeg). They turned out soft and puffy perfect and way to easy to eat many at a time. Several requests have come in to make these often!!

Creamy Scallop Chowder

This was a very tasty soup! I did not have green onions, so instead I used regular onions. I did as another reviewer suggested and sautéed the scallops in the grease of the piece of bacon that I cooked before hand. I then added, in small pieces, the bacon to the soup. I only cooked the scallops for one minute on each side and then added them to the soup at the very last moment. Scallops should not be over cooked, otherswise they loose their light texture and become chewy and rubbery. I did as others and added some chives and a cup and a half of chicken stock as well as potatoes which made this soup filling enough as a main course.

Slow-Cooker Chicken Tortilla Soup

This was good - but I was expecting more after all of the reviews. I couldn't find the right oz specification of enchilada sauce, so mine had more than the recipe called for, and perhaps that was the problem. The recipe appealed to me because of the ease of throwing everything in the crockpot- and I MAY make it again. I may also look for another recipe. It was good, just not great.

Raspberry Almond Muffins

I had a big bag of Costco Mixed Berries that I wanted to use up so I found this recipe. I usually use whole wheat flour and apple sauce in all my bread/muffin recipes but I gave these a whirl. They were very good and the whole family liked them. I added a little turbinado sugar to the top before I baked them because I was worried they would be too tart. I didn't have a problem with a grey muffin since my berries came straight from the freezer and I didn't over mix them.

Warm Blue Cheese Dip with Garlic and Bacon

I had a party last year where I first serve this dip. This year was the second annual event and I was given as RSVP contingent upon serving this dip again. I made a lot & i was devoured! You may want to keep it warm in a small crock pot or serve in a microwave dish that can be warmed up a few times through the night as its at it best texture & taste served warm. Mmmm!

I love licorice and have been looking for a long time for a good recipe. If fact, it has been hard to even find a recipe. This one is awesome. I increased anise to 1 Tbsp because I like a stonger flavor. Thank you so much for this fantastic recipe.

Eggplant, Roasted Pepper and Chicken Pitas

Reminded me of the flavors I had on my Mediterranian vacation - "Mezze" platters in Turkey. Also, try adding artichoke hearts and feta. If your artichoke hearts/roasted red peppers are marinated, you don't need to add much more of your own seasoning. I don't know why reviewers are saying to use red wine vinegar, balsamic is accurate.
