About me:
I have a degree in Mechanical Engineering, but I am a stay-at-home mom! My kids (and hubbie) expect me to be able to change tires/batteries in my car and then come in and fix a gourmet meal for them! I love to sew - I'm trying to get an at-home sewing business going. Not an easy task, when I am expected to repair the car, cook meals, take the kids to school,pick them up, clean house, do the wash, and get my business going! Plus I am a Keeper Assistant at the local zoo - my mental life saver! Animals are soooo much easier to relate to than kids!

Greek Pasta with Tomatoes and White Beans

Initially this sounded good...but then I read the so-called reviews. There were so many changes/additions/deletions I didn't know where to begin. Ladies, make the recipe as is. If you feel the need to change things & not just tweek...submit your own recipe. Otherwise just submit tweeks, not major changes! Sorry for the rant, but I get so tired of reading about a wonderful recipe only to find out it's only wonderful if you make the following major changes...

Cheese Souffles

Bland the first time I made it, but a good base recipe. The second time I made this I made a few modifications. First, I sauteed some shallots and garlic that I added to the egg yolk base. Also, I buttered my dish and coated it with parmisan cheese which helped the souffle get that nice crust around it as it cooked. Lastly, I didn't think the step of returning the ingredients to the pan after the egg yolks were added was neccessary. Most souffle recipes I have tried in the past don't ask to do that, they just simply add the rue and the egg yolks, fold in the whipped egg whites, then cook it in the oven. I cooking the egg yolks, like this recipe suggests, and it turned out more fluffy when I didn't.

Cheryl's Spinach Cheesy Pasta Casserole

Doubled this recipe,used large shell pasta, added some cubed squash & extra cheese and spices, served with grilled lemon pepper chicken. Great dish! My family loved it and I will surely be making it again. Thanks for another favorite!
