Gobble Up Granola Snacks

Mmmm, very tasty! I don't like using corn syrup because of the high fructose in it, so I used agave nectar instead. I did have a bit of a crumbly problem but not too bad. I think next time I will use more peanut butter to help them stick together more and to get more PB taste. I think I'll also add ground flaxseed next time for extra health. I love how easy this was to put together, too, and no baking. Thanks Tinamaries!

Baked Lemon Chicken

My son and I had this for dinner last night. I used boneless, skinless chicken tenders instead of breasts. I used an entire lemon and italian breadcrumbs and it came out awesome! We ate this with a side dish of broccoli that I baked in the oven sprinkled with a little olive oil, sea salt and lemon juice.

Jalepeno Cheese Dip

I made this for my mom's birthday. I used monterrey jack cheese and 5 jalapenos because we like spicy. I mixed 3 of the jalapenos within the cheese mixture and sprinkled the other two on top. I also added a white onion and tomato. I baked it in a ceramic dish for about 35 minutes because at 25 minutes the center of the dip was not melted enough. It tasted better than I thought it would. I will absolutely make this again.

Mexican-Style Goulash

Sorry, but this is a version of chili-mac and it is WAY too bland. Good starter. Kick it up with cumin, cayenne, garlic and extra macaroni.

Fierro Chicken

This was delicious and easy. It was awesome as leftovers (5 star) and pretty good the first time around. (4-4 1/2) I did end up cooking it a little longer since I wasn't sure if 40 was enough. (Thick breasts) The chicken was very, very tender. Thank you.

Garlicky Baked Butternut Squash

It was really good. The recipe doesn't specify when to add the Parmesan cheese. I added it while cooking and that was a mistake since a lot of the cheese, garlic and parsley stuck together. Now I know to add the cheese after I take the squash out of the oven. It was still very delicious!

Seafood Fettuccine

I tweaked this a little. First off I made it for 4 instead of 8. Then I added less onions because no one I was cooking for likes a lot of onion. I also added about half a cup of wine to the sauce. I did let the sauce boil near the end of the cooking process, which the recipe says not to. nd I added extra cheese. But this turned out really well. I had to let me sit and cook longer that the recipe said, which was fine. I added extra liquid (the wine) and I'm not the best at sauces. Plus I had my wisdom teeth out the day before and cooked this while taking a good amount of Lortab. The only bad things I would say is I was worried the scallops wouldn't be done (and they wouldn't have been if I just cooked this in the time the recipe said and that the sauce was on the bland side...which I take responsibility for as I added less green onions and only moderate amounts of salt and pepper. Next time I will add more salt, more pepper and perhaps white pepper. We liked this a lot and all of it was eaten. Its a great base to tailor to your specific tastes and really, really easy to cook. Also when its done it looks lovely and very Olive Garden-ish.

Smoked Paprika Goulash for the Slow Cooker

This recipe is fantastic but it is NOT goulash! Goulash is a soup. However, this is so very tasty that I have to remember that people call things by different names. This is actually closer to Paprikas, which is very good also. The key is to use SMOKED paprika. Sometimes it is very hard to find. Regular paprika does not have the same flavor. You want to try and find Pimenton dulce as that is the sweet smoke paprika. Excellent recipe!

Pork Chops German Style

These were delicious! My husband raved...and he usually thinks that cooking pork chops in anything but cream of mushroom soup is too complicated. I used a combination of whole-grain Dijon & a sweet/spicy garlic mustard to make them, and it was well-received by my dinner guests for sure. My husband and I were fighting over the leftovers for lunch the next day!

Mayonnaise Cake I

This isn't a 5 star cake in my book, but I really like it. Hadn't eaten or made a mayo cake in years. I used it as a chocolate strawberry shortcake with whipped cream on top. Next time, I'll add another Tablespoon of cocoa to the batter. There will be a next time because this cake is so easy. I halved the recipe and baked it in a 9" round. I think this would be good with caramel or peanut butter frosting.

Kimberly's Meaty Meatloaf

This recipe made my meatloaf tighten up and firm for me. Which was sort of a good thing since I cooked this recipe in 2 8" round cake pans. I drained and stacked them on top of each other to create a meat cake for my father's birthday. I didn't use the cheese only because we have picky eaters in my family. I "frosted" with garlic mashed potatoes and barbecue sauce. It was a huge hit taste and novelty wise.

Caramel Popcorn

I love my whirley-pop popcorn, but I don't measure and sometimes get things a little too salty. This is our favorite way to "rescue" the popcorn. So much so, that my husband has asked me to over-salt a batch just so I'd make this again. Thanks for the awesome recipe!

Mom's Zucchini Bread

I made two batches of this, one with a crumb topping and one without. The loaf and muffins with the topping were definitely our favorite. I didn't drain the zucchini and each batch took four small ones to make the two cups.
