Lebanese-Style Red Lentil Soup

I made this with dinner tonight and we liked it a lot. I used just 1/4 tsp cayenne and it was plenty spicy for us (I have a 5 year old daughter), 2 Tb oil, the juice of just one medium lemon, more salt, vegetable base instead of chicken, and 2 chopped carrots. Also some extra cumin: it's hard to get too much of this awesome spice in my household. I did not have any cilantro on hand so I skipped it but it was great anyway. Highly recommended for weekday supper; try with salad and a baked potato. Easy, high fiber, and healthy!

Justin's Hoosier Daddy Chili

Caution: The sodium content is wrong if you add any salt at all!!!! This is for the recipe ingredients only. Use Nu-Salt substitute instead and this is F-A-B-U-L-O-U-S!

Too much olive oil. I use half. Sauces will not stick if you use too much. For those saying it doesn't save time.... One word..... MICROWAVE!

Divine Hard-Boiled Eggs

Suggestion: Run a little cold water over 2 eggs while you crack and peel to make sure eggs are truly cooked! Put a little butter, garlic powder, salt and pepper on those hot eggs and enjoy! I cracked the other eggs with spoon, dropped them in a bowl of water with a little ice and stuck em in the frig. They peeled perfectly, looked beautiful, yellow yolk, no probs! Thanks so much for this basic info!

Oregano Cubed Potatoes

When I bit into these tender, fragrant potatoes, it took me back to my childhood eating gyros and Greek potatoes in Marathon Greek Restaurant in Tucson, AZ. Thank you for an incredibly tasty blast from my past--I shall be making these for years to come! Dried oregano seems to work just as well.

Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

I was nervous about the sauce and the method of cooking but I have to admit these ribs were fantastic. The sauce might use a little adjustment for my taste but these were the most tender ribs I've ever made that didn't come from the crockpot. I don't give 5 stars all that often. These were at least 5 stars though. AWESOME!!!

Carrot Souffle

This is so yummy I can hardly stand it!! I was very limited on veggies but had lots of carrots so I thought I would try this. I used 1/3 white sugar and 1/3 brown sugar and added a little clove and a little netmeg. Everyone LOVED it!! I will make again and again!

My husband thought it was ok, but I really didn't like it. It was mushy and tasteless. However, we are vegetarians so I didn't use bacon I think that probably had something to do with the fact that I didn't like it.

Santa Fe Enchiladas

I don't know what these are, but they are NOT Santa Fe enchiladas. It is good, if a bit bland. Those of us from the southwest would not serve this to guests. I'm glad some like it, but I won't try this again.

Chocolate Zucchini Cake I

I was very pleased with this cake! The flavor was rich with the hit of cloves, and it was very moist, needing no embellishment besides the chocolate chips scattered over the top. I omitted the nuts, used buttermilk, used all egg whites for this, also a full tsp. cinnamon and baked it for about 36 minutes in my convection oven. It can be dressed up by sprinkling a little 10x sugar [confectioners' sugar] on top after it cools. I used coconut oil for the vegetable oil...with awesome results. Note that this cake does not rise much - it is more of a "snack-cake" height. Very good and recommended for families with kids.

Gobble Up Granola Snacks

Mmmm, very tasty! I don't like using corn syrup because of the high fructose in it, so I used agave nectar instead. I did have a bit of a crumbly problem but not too bad. I think next time I will use more peanut butter to help them stick together more and to get more PB taste. I think I'll also add ground flaxseed next time for extra health. I love how easy this was to put together, too, and no baking. Thanks Tinamaries!

Baked Lemon Chicken

My son and I had this for dinner last night. I used boneless, skinless chicken tenders instead of breasts. I used an entire lemon and italian breadcrumbs and it came out awesome! We ate this with a side dish of broccoli that I baked in the oven sprinkled with a little olive oil, sea salt and lemon juice.
