Good Old Fashioned Pancakes

Good, thick but fluffy and tasty all together but there was a bit to much baking powder in there for my tastes. I enjoyed it but I will keep looking for the perfect pancake batter, this was yummy but not quite it for me at least.

Homemade Vanilla Pudding

This was pretty good, but it was too sweet, and without eggs it wasn't quite rich enough, and was strangely pale. If I'm in the need for a dessert that doesn't require eggs, I'd make it again, but would definitely use whole milk or some cream, and would add a few drops of yellow food coloring. I'd also cut the sugar back to 1/4 c.

Old-Fashioned Vanilla Pudding

Yum - this hit the spot! I've made another pudding recipe from this site, but it didn't use eggs. The taste (and *especially* the color) weren't right. This had just the right richness and taste. Very easy, and very good.

Make-Ahead Mashed Potatoes

Yummy, creamy mashed potatoes - so easy to make & saves sooo much time too! I also used tips from other reviewers: added about 1 oz cream cheese and mixed in while mixing. I also used an electric hand blender and it worked fine. Came out creamy, and like someone else said - like instant (super creamy) but better!

Giblet Gravy II

Easier than the gravy I had been making for years where I had to slowly add a milk/flour mixture which eventually would turn into cement by the end of dinner (made me wonder what it did to my insides). Tastes YUMMY too! Missed a star because I did add about a teaspoon of cornstarch when the gravy wasn't thickening up enough for me, even after sitting for a while per the recipe. Didn't have to add much salt. Will make again !

Peanut Butter Cup Cookies

Just superb! I have made a similar recipe in the past that always seemed to turn out a little too hard/crunchy. These were very soft when I followed the instructions by many here to bake for only 8 minutes. A tip for bakers who have lots of tools around: use a #70 disher (scooper) and just plop the half-spheres in each cavity of the tin. You will get about 44 cookies that cook uniformly and look great. I ran out of PB cups and stuck Hershey Kisses in a few of them and they were very good too! Make certain you have refrigerated or frozen the candy first, or it will be messy and a little sloppy when you insert them into the hot cookies. It is true that when you remove these from the oven they look underbaked, but fear not! Delicious.

Waffles I

This would get 5 stars but it did need just a little tweaking IMHO...I added 1 tsp cinnamon, I beat egg whites separately and folded in last, doubled sugar to 2 Tb (could use 3 next time), used a little less oil (will try melted butter next time for flavor), and had to add a little milk to make it flow over the waffle iron. I decided to try half whole wheat flour and was pleased with the result. These waffles cooked MUCh faster than most other recipes I have used: they were done in 3 minutes max even on a medium setting. Very light and crisp on the outside, they were not at all chewy or dense. In fact, they were probably the lightest in texture I have ever made. We enjoyed them with butter and real maple syrup this morning. Yum!

Green Chile Chicken Soup

I used 2 cups of NM green chile and added an additional cup of chicken broth, an additional cup of milk and 1 cup of heavy whipping cream. It tasted great and I will be making again. A very warm and creamy soup for a cold evening. Next time I may add some diced onion.

Pumpkin Crunch Parfaits

I made this for a Halloween potluck and all my coworkers went crazy over it. I do not like the taste of gingersnaps so I used vanilla wafers instead. It tasted awesome and I am planning on making it again for Thanksgiving. I served it in a large bowl instead of parfait glasses and it fed more than 6 people.

Chicken and Pasta Primavera

Used this recipe as a base, changes I made: no cheese or milk! fresh chicken breast pieces stir-fried with fresh garlic, and fresh mushrooms sauteed with butter and a splash of chicken broth. Mixed them all together in one skillet, put in the CofM soup, added the broccoli, let it sit covered on very low heat. No carrots, but added the pasta at the last, with fresh tarragon and put it in the fridge for hubbys lunchies for the week. We usually do not eat processed food, but my husband is a fan of midwest-cassarole in the winter, and this was easy to make & take, plus he said it was delicious! So even tho I changed it up hugely, I did get the idea from this base recipe, and am gonna give it 5 stars.

Tuna From Can To Frying Pan

Juicy Roasted Chicken

One of the best roasted chicken dinners I have ever made or tasted. I added 1 cup of white wine to the bottom of the roasting pan and some fresh sprigs of thyme. Was wonderful with steamed green beans and garlic mashed potatoes. Will make for years to come!

Banana Banana Bread

Pumpkin Cookies II

Made these after Halloween, and used pumpkin from scratch. I made for a very runny batter and the cookies came out way too soft. I may want to tweak this or combine with another recipe that is similar.
