Pumpkin Crunch Parfaits

I made this for a Halloween potluck and all my coworkers went crazy over it. I do not like the taste of gingersnaps so I used vanilla wafers instead. It tasted awesome and I am planning on making it again for Thanksgiving. I served it in a large bowl instead of parfait glasses and it fed more than 6 people.

Chicken and Pasta Primavera

Used this recipe as a base, changes I made: no cheese or milk! fresh chicken breast pieces stir-fried with fresh garlic, and fresh mushrooms sauteed with butter and a splash of chicken broth. Mixed them all together in one skillet, put in the CofM soup, added the broccoli, let it sit covered on very low heat. No carrots, but added the pasta at the last, with fresh tarragon and put it in the fridge for hubbys lunchies for the week. We usually do not eat processed food, but my husband is a fan of midwest-cassarole in the winter, and this was easy to make & take, plus he said it was delicious! So even tho I changed it up hugely, I did get the idea from this base recipe, and am gonna give it 5 stars.

Tuna From Can To Frying Pan

I tried this against my better judgment since the thought of tuna and broccoli sounded so weird to me. This was awesome and so quick for a weekday meal. Served with a side of steamed rice and it was perfect!

Juicy Roasted Chicken

One of the best roasted chicken dinners I have ever made or tasted. I added 1 cup of white wine to the bottom of the roasting pan and some fresh sprigs of thyme. Was wonderful with steamed green beans and garlic mashed potatoes. Will make for years to come!

Banana Banana Bread

I used some over ripened bananas, and doubled the recipe. Apparently it wasn't enough. I made mini loaves to share and got calls for more the day after. I have a happy family when I make this. Thank you for this recipe.

Pumpkin Cookies II

Made these after Halloween, and used pumpkin from scratch. I made for a very runny batter and the cookies came out way too soft. I may want to tweak this or combine with another recipe that is similar.

Aioli (Garlic Mayonnaise)

My husband went nuts over this recipe, it was incredible with crab cakes. We ate it ALL at dinner with just us two! I read all the reviews and suggestions...egg yolk at room temperature, add paprika, increased raw garlic to 4 cloves. I would add that I would run the garlic thru a press for the most garlic flavor. Also, this tastes very different alone as opposed to with food. Don't discount it until you accompany it with shrimp, salmon croquettes or crabcakes. Next time, I will add chives, fresh basil and some herbies, too lazy to wander to the garden today: November 1 and 90 degrees in Tucson, AZ! Thanks to all for suggestions and LIANNEF for a great recipe!

Persian Cucumber Yogurt (Maast-o Khiar)

I feel the recipe calls for too much cucumber. Also, I guess I have to thank this recipe for teaching me that Im not a fan of dillweed. I never tried it but now I know. I prefer another tzatziki recipe thats simpler; it is mostly yogurt, garlic, salt. No offense, just not my taste.

Middle Eastern Rice with Black Beans and Chickpeas

I followed the recipe except that I reduced the beans and stock, and cooked half the spices with the meat and the other half with the rice as per several reviewers' suggestions . It was ok. Im sure this tastes good for the recipe it is; maybe Im just not crazy about this particular spice combination--although I like Middle Eastern spicing. If I were to make it again I'd probably add raisins and some cinnamon, just to give it some contrasting flavor-- needs a little sweetness or something. I added a generous squirt of ketchup, maybe it was my attempt to add some sweetness.

I rated this only a three due to the false advertising that this was hot. One look at the ingredients told me it is very mild on the spice chart. I added sliced jalapenos and serranos and it was great. And THEN it was hot!

Apple Butterscotch Crumb Pie

I tried this because I was looking for an apple pie without a crust top(ran out of Crisco making the bottom!) Like the first person who tried this I made a larger portion. I used the servings calculator for an 8 serving pie. I also used my own crust (Basic Flaky Crust from here). The filling was perfect but the topping I will half the next time, just a little too much. Over all though we all really like this including my husband and out 2 guests! I will make this again as I loved the butterscotch with the apples and not having to deal with a crust top.
