Southern Shortcake

I made as directed and the dough was impossible to roll--you would need at least 1 more cup. I added 4 tbsp of sugar to my batter and made drop biscuits instead of rolling (I like rough edges). Would have liked more sauce for the biscuit to soak up, but there were no complaints, only requests for seconds. I would double the berries next time as well.

Baked Potato

rubbed my potatoes with vegetble oil and spinkled with sea salt before baking. My potatoes were large so it took about 1.25 hours. Perfect with a little salsa and sour cream!

Zippy Broccoli

I omitted the water/hot sauce and used chicken stock instead. Omitted the oils, and used a few tbsp of margarine. Mixed the garlic and salt into the margarine, adding pepper and onion powder as well. Placed in gallon size ziploc bag on high for 7 minutes, shuffled bag, and put in for another 3.

Potatoes with Fresh Ginger and Chilies

This was an interesting dish. I agree with Mister Umpire, who has curry leaves? I'm not even sure I know what they are, but I did have the rest of the ingredients. Very fresh and interesting way to have potatoes. I used a can of green chilies and fresh ginger. Thanks for sharing.

Asian Style Meatloaf

I LOVED this, but I'm a BIG fan of Hoisin sauce. My DD and DH thought the sauce was a little heavy, but what do they know?! Next time the only thing different I will do is cut the celery and onion up a lot finer. Other than that this is really good and different thanks for sharing.

Buffalo Style Chicken Pizza

This was just ok for us. For some reason I got a bitter taste while eating this. After much thought I think it may have been the grilled chicken. I also thought it was salty tasting. I used Ken's bottled blue cheese and Frank's wing sauce. I'm not sure if the combo of dressings made it salty. Thanks for sharing we like to try new things.

Parmesan-Black Pepper Arborio Rice Pilaf

This recipe was pretty good but I would make a few changes next time. I would cook it for 15 minutes and it needs something to brighten it up a little. I felt it was a little bit bland. Maybe add a little lemon to it would be good.

Easy Cajun Jambalaya

This was easy and tasty. I followed the recipe exactly except I upped the cayenne pepper to a teaspoon! Not sure that was smart it was really spicy! I was just thinking with all that rice it might suck the spice in. If you don't like spicy I would keep it to a 1/4t. I used turkey kielbasa instead of regular. Thanks for sharing.

Quick Sunshine Cake

We loved it! Made a 9x13 inch pineapple flavored cake, then split it to make a 2 layer. Make the full amount of frosting and then sneak some for yourself! You won't be disappointed!

Citrus Glaze

this just didn't do it for us. I was looking for more of an orange glaze and I think the lemon I used was way too big. I used chicken stock in place of the water and a dash of balsamic vinegar. Too lemony, next time leave out the lemon and lime, just use orange maybe.

Prawn Nasi Goreng

I made this recipe as stated with the only change being the quantity- I changed it to 4. When I did the calculation it upped the brown sugar, but I left that at the original amount of one tablespoon. This was good, not great and the flavor didn't wow me. It came together easy and I had every thing in my staples. I would probably give it a 3.5 stars. Thanks for sharing.

Cucumber Salad I

I used white onion instead of regular and used the one cucumber I had on hand. I used agave nectar instead of sugar and I increased it as I like my salad a little sweeter. Added black pepper as well. Even the kids ate it up! Used garlic infused rice vinegar (what I had) YUM!!!!!!

Jalapeno Chicken II

This one was just ok for us. We love the poppers with the jalapenos stuffed with cream cheese and wrapped in bacon. I'm not sure why this didn't work for us. It was just average. My cooking time was much longer than the 20 minutes. I pulled mine off at 30 minutes and they were still not done. Thanks for sharing.

Breaded Toasted Ravioli

I made the recipe exactly as written only used panko bread crumbs instead of regular bread crumbs. If I made this again I would add A LOT more spice to the breading mixture. Fresh garlic, salt and pepper. I thought it was a little on the bland side even with the parm- and I added extra. I put foil on my baking sheet for easy clean up. Thanks for sharing. My daughter enjoyed this a lot.

Dijon-Tarragon Cream Chicken

This is a really good recipe, but I only gave it 4 stars because of all the editing I had to do to suit it for my tastes. I did like most people, I coated it in seasoned flour. After, I deglazed with some white wine, and added some shallots and garlic. Then I add the cream, mustard and tarragon. I really like this with some plain white rice.

Key Lime Pie VII

My 14 year old daughter made this. She LOVES key lime pie. Neither her father or I are big fans of it so this is her rating. It was easy enough to make without supervision for her. We also did not get the pinholes popping or as she said pine holes popping. We ended up with it in the oven for around 10 minutes then took it out. It set up fine.

Jimmy's Mexican Pizza

I would give this 3.5 stars if they would let me. This was easy to make and put together. My only complaint about the dish was that I was expecting the bottom tortilla to get crisp with the cooking spray on the pan and it actually got soggy with the beans. This would be a great busy night meal. Thanks for sharing.
