Pumpkin Gingerbread

I love the way this made my house smell!! It was so easy to change for healthier a little as well. I used 100% fresh ground whole wheat flour in place of all of the all purpose flour (add a smidge more baking powder and baking soda), along with applesauce instead of oil (added a small splash of Canola Oil) and changed the sugar into 1 cup white, 1 cup brown and 1/2 cup Mollasses (decrease the water by just a smidge since you add a bit of liquid this way)... perfect for gingerbread! We also used fresh pureed pie pumpkin that we roasted the day before. Awesome!!

Mushroom Pork Chops

We really liked this recipe. It was easy to prepare and was super yummy. I made this in my electric skillet. The only changes I made was to add a fifth pork chop and an extra can of mushroom soup so we had plenty of gravy for mashed potatoes.

White Chili with Ground Turkey

Wowza, this was a tasty recipe. My whole family enjoyed it. I used Northern beans and no Cayenne. It was more like a soup than a chili. You could thicken it up but we liked it just fine. It was super easy to make too. Will make this again. Served with cornbread.

Cottage Cheese Chicken Enchiladas

I really liked the flavor of these enchiladas. My whold family enjoyed them. I used a whole rotisserie chicken shredded up and green chili verde sauce. My family prefers it with chicken to the red. The only thing I would change which was my choice, I warmed the shells in the microwave to save time rather than softening them in oil. They fell apart when we served them. This is a keeper.

Manicotti Italian Casserole

In my desperate search for something to make for dinner I came across this recipe before I left for work. I am giving it five stars for ease of preperation and being super kid friendly. Every one liked it. It made a lot though. I would say the only drawback is that that it was a little pricey for a casserole. Thanks for the great weeknight meal! It was a lifesaver!

Super easy! Fool proof. I made it exactly and the meat was very tender. I cooked it for 9 hours on low in the crockpot. I want to add mushrooms next time and there will be a next time! Thanks for the great recipe!

Lemon Linguine

Shrimp Scampi Bake

This was the easiest recipe out there. I made it exactly. It turned out fabulous. I paired it with the lemon linguine and great green salad recipes from this site. They all have simliar ingredients and went well together. It's a keep. Oh, and it made a lot!

Delicious Ham and Potato Soup

I have been making it for my family for over a year now. The only thing I changed though is I add one more cup water, 1 cup dry lentils. And I use one box vegetable broth instead of 6 bullion cubes. This cuts down the sodium immensely, but you still keep a lot of the flavor. I also use nonfat dry milk reconstituted for my milk to cut down costs. Just as creamy!!!

Oatmeal Raisin Cookies I

Unlike some of the negative reviews I read that the cookies "ran" or were "greasy" or "flat disks", not at all, I thought they were excellent. I was looking for a soft, chewy, flat oatmeal cookie better than the recipe I had been using and these were delicious. I took the suggestion of someone who used a full cup of butter instead of 3/4 and they came out just like I wanted them to, not greasy, just a perfect oatmeal cookie!

Tasty Baked Meatballs

I made this recipe exactly. I thought they were really yummy and had a nice flavor. The texture was a little soft, I would like a more firm meatball. We ate them two ways for dinner. Some of the family wanted subs and some of the family wanted them with mashed potatoes and gravy. I think they were better matched for the mashed potatoes and gravy. Will make again!

Peanut Butter and Jelly Sushi Rolls

Made this for my 6 year old daughter for a suprise snack and she loved them. Creative and easy to make! Plan on making them for my 12 year olds lunch. She takes peanut butter and jelly to school almost every day so this will be a nice twist. We use the Candy Apple jelly recipe from allrecipes. Yummy!

Lime Chicken Soft Tacos

My family really enjoyed this recipe which include 3 picky kids. I made it exactly. The only thing I would change next time is half the pepper and use fresh cilantro as others have suggested instead of oregano. They were yummy and fresh tasting. Easy to prepare. What's not to like!

Baked Ziti Supreme

I am rating this recipe based on my kids because I didn't try it except for a bite. My kids both loved it. One took it for school in her lunch the next day. I made it in the morning and put it in the refrigerator then baked it for dinner. I rated it a 4 based on my bite, it was little bland for my taste. Super easy back to school meal. I would cover it for 20- 25 minutes with aluminum foil and then remove the last 5-10 minutes while baking so the noodles don't dry out on top.

Fried Green Tomatoes

Loved this recipe. Last attempts had batter falling off. This did NOT. Used the mistake previously commented on of adding crushed crackers to the flour. Simpler to do and it worked beautifully. I would add a little more salt next time. And definitely not quite so green tomatoes!

Slow Cooker Buffalo Chicken Sandwiches

I loved this sandwich. I used Texas Pete's buffalo wing sauce. It was spicy but oh so yummy. I made it exactly with the exception of using Country Crock light instead of butter. Also used the kaiser rolls. Made Adrienne's cucumber salad to go with. Perfect combination.

Monkey Bread V

Grandma's Vegetable Soup

We made this recipe in my pre-k class for a unit on friendship. I called it friendship soup and each child brought in an ingredient. It was a cinch to make and very tasty. Out of the 11 kid only one would not try it. The 10 kids who did loved it with several asking for seconds. The only changes I made was I used V8 juice in place of the tomato and added to cans of vegetable broth. We did not season with salt, pepper and ginger as the V8 gave it a lot of flavor. I am making it tonight for my family.
