Cheesy Cauliflower Couscous

Pork Chalupas

Pretty good. I halved the salt and it was still too much. If I make it again I'll omit the salt completely. I liked the bean to meat ratio, perfect for us. Served for a large dinner get together and it went over well, especially the older kids.

Cucumber, Tomato, and Red Onion Salad

Tomatoes and cucumbers are in abundance here in Japane and have come to love making this salad several times a week. If I serve it to guests they always compliment on how fresh it tastes. Wonderful recipe.

Creamy Coriander Chicken

This was very tasty and gourmet looking. I had whole coriander seeds so I had to crush them with my motar and pestle so it probably wasn't as smooth as the purchased kind. I also had fresh cilantro on hand instead of jarred. Loved the end product and will probably make again in the future.

Rosemary Ranch Chicken Kabobs

Wonderful. I cut the recipe in half and was still too much marinade so I added a bunch of veggies to it (eggplant, onion, and green peppers). The flavor was wonderful and the little kids tried it too. Will make again.

Special Butterscotch Chip Cookies in a Jar

I just made these cookies for my family and a few college kids over to tutor my kids. Wow, I am surprised at how good they taste. I followed the recipe exactly but used regular rice crispies. They turned out pretty flat by they are still so soft. I froze most of the dough so I hope the frozen then baked ones turn out as well. Might have to make these as gifts for Christmas this year.

Grandma Johnson's Scones

These were awesome! Insead of raisins, I added fresh raspberries and white chocolate chunks, as well as drizzling a powdered sugar, milk and vanilla glaze on top. Will definitely make again. Oh, and I made these at 7,700 ft. elevation while at a family reunion, and don't usually have good luck baking at that elevation and they turned out awesome! Very pleased. :)

Tempura Dipping Sauce

Not bad, but not like the dipping sauces served here in Japan. I felt it was flavored to heavily on the dashi side. I think I will look for a different recipe but this was nice and easy and I had everything on hand to make with a last second Shrimp Tempura recipe I made tonight.

Shrimp Tempura

Living in Japan, I have tried a variety of tempura and this ranks up with some of the better dishes I've had. This is my first attempt at making it, rather than just ordering it. I also used one sweet potato sliced lengthwise and steamed beforehand. My husband didn't speak the entire time because he was too busy eating. I also made the tempura dipping sauce from this site which was just ok. But, I'll use this recipe again in the future. Maybe I'll upgrade to tiger prawns.

Browned Butter Vegetables with Almonds

Enjoyed! I halved the butter and it could still be decreased. I steamed my veggies for several minutes beforehand because my girls won't eat crisp tender veggies, however they wouldn't touch these. Regardless, my husband and I liked them. Might make again with the a slight decrease in butter.

Smashed Cauliflower

We have quite a few friends on low carb diets. So we tried this out and it was yummy. I did drain out the chicken broth and added some seasonings to it (was a little too bland for us). But unless someone told me it was cauliflower, I would not have believed them. YUMMY recipe!!!

Mini Meatloaves

We had 2 couples over for dinner tonight and I tried this recipe. I added onions (like others had suggested) and some Italian Seasonig too. I cooked them in the jumbo muffin tins. It is something that I think I will be making more often!

Japanese Soup with Tofu and Mushrooms

I live in Japan and wanted to make my first miso soup. If you don't use dashi, you won't get an authentic miso soup. It's essential in Japanese cooking. I had no idea which Miso paste to buy and since I can’t read the kanji I ended up buying a red and white combination. Appearance and taste differs between the two. I used dried shitake mushrooms that I rehydrated along with silken tofu. Served to my Japanese friend and her two year old and the two year old had three helpings and kept saying "oishii", delicious. Even my 22 month old devoured the stock, pushing aside the mushrooms and tofu. I will make it again and will look for more similar recipes.

Award Winning Soft Chocolate Chip Cookies

I'd rate this a 4.5 because it's not the best chocolate chip cookie I've ever tasted, but pretty darn good. I still perfer the Pumpkin Chocolate Chip Cookies III recipe from this site. I made a half recipe and it made tons of cookies. So much so I had to give away a bunch (wish I would have frozen a good portion of the dough in balls). I can slightly taste the pudding, but it's minimal. I used chocolate chunks and whole wheat flour but otherwise followed the recipe to a T. If I make it again I'll try using sugar free pudding to see if there is any difference. Everyone seems to love them, except my three year old won't touch them. Thanks for the recipe.

Wonton Soup

A fantastic wonton recipe that is easy to prepare and cook. You may omit the shrimp and brown sugar, and substitute rice vinegar for the rice wine, and the wontons will still turn out yummy. Add about 2 teaspoon of sesame oil to the raw meat mixture to enhance its flavor. Uncooked dumplings freeze well. I always make 2 to 4 batches ahead of time.***FREEZE: each dumpling individually. Once frozen, they can be stored together, each layer separated by a thin plastic film, paper towel, or foil. The broth is mediocre, but perfect for those days you don't want to spend time cooking in the kitchen. Just throw in a few frozen dumplings and cook till well done; a tasty meal in under 10 minutes!

Grandmother's Buttermilk Cornbread

I just pulled these out of the oven and wanted to try it before serving (always nervous serving something brand new to guests). It was wonderful. I did make one major alteration. Since we can't buy buttermilk here (Japan) I used 3/4 cup fat free plain yogurt with 1/4 lowfat milk. Otherwise I made as directed. It is wonderful, and I'm picky about the sweetness in cornbread. It's slightly sweet but not too sweet.
