Southwestern Egg Rolls

Reviewed: Jan. 8, 2009
These are delicious and unusual. My husband loves these. I doubled the recipe, put them in 10 inch tortillas. Deep fried them and sliced them diagonally down the center. They look great and cool off quicker. I also froze a few just in case someone stops by, i have something quick.

Fried Steak with Peppercorn Gravy Sauce

My family loved this recipe. The only thing that I changed for my husband was switching the peppercorn for regular pepper. It made it easier for my little ones to eat. Also...definitely double the gravy. Yummy!

Great recipe with great flavor! I will use it again next year. One caution is that you really have to watch the time very carefully or your cookies will burn in the blink of an eye and be on the crispy side Unfortunately my new cookie press didn't have what it took to go the distance and it went in the trash can :(

OMG! I used this recipe on chicken wraps. I combined it with grilled chicken, lettuce and tomatoes and wrapped it in a tortilla and it was FABULOUS! So good, thank you for the recipe!

Awesome recipe! I absolutely love this chicken. I change a couple of things: I changed the flour to 3/4 cup and used whole wheat flour, I also used triskits instead of bread crumbs and it was sooooo good. I will definitely use this recipe again. Thank you!

simple, easy to make and very tasty! i like to use apple juice instead of orange, but it turns out very well both ways! there's no going back to canned after making it fresh. :)

Baked Pesto Chicken

Reviewed: Nov. 3, 2008
Delicious! I marinated (after the suggestions of others) for about an hour or so. I added a sprinkle of parmesean on top of the cheese. For a side dish I heated up a bag of mixed veggies, tossed it with some olive oil and some cooked penne pasta, garlic powder, and more parmesean cheese. BOTH were outstanding and extremely EASY to do.

Apple Squares

Great recipe - but way too much sugar. I cut the sugar in half. 1/4 cup of brown sugar and 1/4 cup of white sugar. The modification in sugar was perfect. It's the perfect sweetness and not over powering at all. You can really taste the apples. I will definetely make again and will be bringing this recipe to my cookie exchange in November.

Carne Guisada III

Reviewed: Oct. 22, 2008
Great Recipe! I dredged the meat before cooking, in flour. That made the sauce a little thicker towards the end so it wasn't so soupy. I didn't have some of the seasonings so I substituted and it still came out great. For the sofrito sauce I added 3 TB chopped onion, 1/3 tsp ground corriander, dash oregano and pepper, 2 cloves minced garlic, 2 TB chopped green peppers, 3 TB chopped tomato. I didn't have any Adobo seasoning, so I just left it out. I also, by accident, added about 3/4 cup of frozen peas. (I dumped them in thinking I grabbed the frozen chopped onions). It tasted great and still added some extra veggies to the pot. I also added 1 cup of chopped carrots about 1 hr before it was done. The carrots were still firm in the middle and not mushy at all. I will definetly use this recipe again. I highly recommend this recipe.

Pesto Twists

Reviewed: Oct. 22, 2008
Very tasty and easy. You can modify this any way you want to suit your taste buds. You can do cinnamon and sugar instead of pesto for something sweet. You can add a thin layer of spaghetti sauce, chopped pepperoni, and basil for a more pizza flavor. Sharp Chedder Cheese and bacon bits would be good too. Explore and have fun!

Very yummy recipe. I added leftover rotisserie chicken and shredded sharp cheddar cheese. For spices I added a little bit of Thyme (goes great with chicken). Leftovers the next day were great too!! I added this to my recipe box.

Awesome Egg Rolls

Reviewed: Aug. 27, 2008
I've never made egg rolls...in fact, I think this was my first time frying anything. They are so good. Just make sure you have mouths to eat them. It was just me and my husband and we overate...talk about a gut bomb. Maybe we aren't used to so much fried food. They are so good though. I served them with sweet and sour sauce and froze half the batch. I wish I'd tried brushing w/ olive oil and baking because that sounds like it might work out. These really are WAY better than any egg roll I've had a restaurant.

Saltine Toffee Cookies

Reviewed: Aug. 27, 2008
DO NOT STIR THE BUTTER AND BROWN SUGAR WHILE IT BOILS!!!!!! I have never made toffee before and I didn't know this. It really should say this in the recipe because they don't turn out like toffee skor bars...more like carmel. They are chewy. I was so disappointed that after I read reviews and realized not to stir the butter and brown sugar (I stirred it a lot, afraid it would burn) I decided to make another half batch just to make sure that was the problem. I also baked them for 7-8 minutes compared with my 4-5 on the first batch. THEY ARE INCREDIBLE, AS LONG AS YOU DON'T STIR!!!! I wish I had known. These taste like Skor candy bars. I sprinkled just a tiny bit of finely crushed pecans on top and they are delish!
