It's Chili by George!!

This is a really nice meaty chili. The biggest change I made was to add fresh tomatoes instead of canned- i didn't have any canned on hand but I think I liked the fresh better! Also, I cut down on the juice.

Excellent Oatmeal Cookies

These were very tasty for such an easy recipe! High altitude adjustments: reduce white sugar to 1/3 cup, increase flour to 1 1/2 cups, temp to 350.

Downeast Maine Pumpkin Bread

I have tried many pumpkin bread recipes. This is hands down the best. I made it as is, except I didn't have veg oil so I used EVOO. It really is even better the next day! Do it!

Beef Bourguignon II

This was good, but a little too oily for my taste so next time I will be sure to cut down the butter. I will also cut down the flour a little. One note that changed the outcome drastically, I'm under 21 and had to substitute beef broth for the wine which is a shame since I feel like that's what it was missing. I'll have to make it again when I'm legal!

I had these in Alaska and have been trying to find a good recipe ever since. These were really good! I did add a pinch more sugar and ate these with honey and butter. Yum Yum

Oatmeal and Wheat Flour Blueberry Pancakes

I used 1/2 cup of apples instead of bluberries and the recipe came out fantastic! Yum! I will definitely make these again soon! They are very filling, I only had to eat one when I normally eat 2-3 normal pancakes so because of that the serving size may need to be adjusted. Or perhaps I'll just make a bunch and freeze them... definitely a keeper thanks!

Delicious Black Bean Burritos

Absolutely delicious and so easy! I had them ready in less than 15 minutes! I doubled the recipe and I skipped the jalapenos, salt (black beans have enough sodium as it is), and the cilantro since I'm not a fan and just added some taco seasoning and a little chili powder with the onions and peppers, it was what I had on hand and it tasted good too. Just for simplicity I added a whole 8oz package of cream cheese instead of 6oz and they came out great. Make sure you drain the beans very well, it helps make the mixture less liquidy and therefore eating them is easier and not as messy. I will definitely be adding these to my recipe box, yum!

Cake Mix Cookies VI

I didn't have any flour in my house, but I needed to make cookies. I did, however have a yellow butter cake mix, so I found this recipe and gave it a shot. Holy moly! First off, the raw dough is heaven sent. I baked my cookies for 9 1/2 minutes exactly and let them cool for about ten minutes. They were perfect, nice and moist. I think you can very easily experiment with these cookies! Next time I will try devil's food with PB chips. My mouth is watering. My hubby and his fellow students loved them! This was sooo much easier then making regular cookies too!

Basic Pasta

This was my first time making pasta and it was so yummy! And it really was easy. I just used a rolling pin and pizza cutter. Like most everyone, I did add a TB of Olive Oil and I let the dough rest for about 15 minutes after kneading. It made it much smoother. I didn't even let mine dry for very long, I just plopped it in some boiling water. For my sauce I made the "Lighter Fettuccini Alfredo" from this site. Yum

Stuffed Peppers with Turkey and Vegetables

These were delicious and so healthy! I didn't have turkey on hand so I used hamburg instead. I also added two cans of diced tomatoes instead of just one, more mushrooms than what was called for, another tablespoon of tomato paste, and sprinkled a little bit of Monterey Jack on top. They came out great! I will definitely be making these again and again and will be experimenting with adding other varieties of veggies to them. Yum!

Four Cheese Margherita Pizza

Great recipe! Instead of using whole basil leaves, I added finely chopped up basil to the oil marinade which is used as the pizza's sauce. Then I added whole spinach leaves to the pizza. I used only shredded mozzarella and feta cheese. This tasted exactly like the pizza I got from a little place in San Diego, CA. =]

Yummy, but next time I'll skip the cilantro and add mushrooms instead. I could see myself eating this for dessert! Substitutions: chicken broth for water, nix the turmeric, add equal sugar with fish sauce.

Sukhothai Pad Thai

My friends came over just to make this! Adjustments made: skip the tamarind, use rice vinegar + soy sauce instead of white vinegar, use fish sauce instead of soy sauce, use udon noodles instead of rice noodles (couldn't find them in town). Next time, I won't use as much salt.

Maryland Crab Cakes II

I used imitation crab and basil instead of parsley. Boyfriend loved it, I felt it was missing something, possibly salt and more mustard (we used mustard, not mustard powder). Chilled as recommended, and kept the crab in chunks. Will try again, but with only 4 minutes in the broiler (5 minutes burned them).

Slow Cooker Pernil Pork

Great flavour! I would just half the salt next time i make this (or even less). I made pulled pork tacos out of the roast and with the salsa i added to my taco, it was overly salty. Other than that, i didn't let it sit for any amount of hours and the flavour was just great!

Juicy Peach Crisp

This was lovely. Instead of the almond extract though, I used imitation rum extract because I thought that would go better with the fresh peaches. It was very good that way.
