Fierro Chicken

Really liked this recipe!! I only added a little of the chili powder because I didn’t want the sauce too spicy. Just enough for me. Husband loved it as well. I added mushrooms on his chicken and then poured the sauce on top. I also added some shredded Monterey jack cheese the last 15 minutes of cooking. I served it over rice with some of the sauce poured over it. This is defiantly become a usual at my house. Leftovers tasted great!

Chocolate Chip Cake Bars

I loved this recipe. So did my husband and little boy. I did not add the shortening to the final chocolate just melted it a little and drizzled it over the top. This would be a great recipe for a potluck or picnic. Also great with ice cream!

Healthy & Delicious Oatmeal Chocolate Chip Cookies

Awesome cookies! These are the perfect oatmeal chocolate chip cookie - Wonderful flavor and texture. I usually follow the recipe exactly the first time, but this time I did make the following changes: (1) used 1/2 c. shortening and 1/2 c. butter, (2) used 1 c. AP flour and 1/2 c. WW flour, and (3) used 1-1/2 c. chocolate chips and 1/2 c.chopped walnuts. Next time I will add a tsp. of vanilla. I also tried baking at 350 and 375 degrees. Baking at 350 degrees resulted in a thicker, chewier cookie which I prefer. This is a keeper!

Zucchini Alfredo

I really liked the sauce to this. I did omit the basil because I am not fond of basil. I will use this sauce as my Alfredo from now on. Yum! I made breaded chicken breast strips and placed them on top for some meat. Thanks for sharing.

Mock Filets

I did not like this recipe. My husband said it was just ok. I do not think it tasted anything like a filet. It was like a little meatloaf. The recipe did give me an idea for making small meatloaves like this and wrapping them in bacon. I was just expecting more from this recipe.

Cantaloupe Bread with Praline Glaze

I really liked this recipe. I took it to my sister-in-law after she had her baby. They really enjoyed it. The bread kind of tasted like pumpkin bread but you could definitely taste the cantaloupe. I think the glaze on the top made the bread. Will make again for sure!

Caribbean Chicken Salad

Great recipe! I love the dressing and will definitely be using it on my salads more often. The only thing we changed was we didnt use the pineapple since it was sweet enough on its own. Can't wait to make this again!

Eggplant and Pepper Parmesan Sandwiches

I thought this recipe was terrible. I tried it because of all the great reviews but the tapenade and goat cheese had a strong taste and didnt compliment each other. I made another sandwich with eggplant, red peppers, lemon cilatro hummus and it tasted so much better. I will not make this recipe again.

Chicken Florentine Casserole

I really liked this recipe and will definitely make it again! I was skeptical if my husband would because of the spinach but he went back for 3rds! I did use frozen spinach instead of canned. I also boiled the chicken first. Then I cut the chicken into cubes, mixed the chicken with the cream sauce and added it all together on top of the spinach. I did not add mushrooms to my side as I do not like them. My husband had a large helping of mushrooms on his and he loved it. Thanks for sharing the recipe!

Anniversary Chicken I

I liked this dish but thought it needed a few changes. Definitely make sure you use a thicker sauce or you wont have much flavor to your chicken. I used homemade ranch, much better then store bought. Also used a couple strips of real bacon instead of bacon bits. next time I think I will wrap the bacon around the chicken since that was my favorite part.

Actually Delicious Turkey Burgers

Yummmm! We made this last night and loved it! The only thing we changed was we added a little flour (wheat flour would work just as well) to the outside of the patties so that everything held together better. Try putting pickles on your burger, the flavor blends together really well.

Juicy Peach Crisp

This was lovely. Instead of the almond extract though, I used imitation rum extract because I thought that would go better with the fresh peaches. It was very good that way.

Potluck Chicken Casserole

This was terrific!! I had to make a bunch of tiny changes due to what I had on hand, but we both loved it and it is a definite keeper - easy to make, too! I doubled the sauce due to some reviewers saying it was dry, and that was a bit much - I think next time I'll just do a 1 1/2 recipe. Lovely!!

Slow Cooker Homemade Beans

Terrific!! Do make sure to cook the beans first. I add beans and 8 cups of water to a slow cooker and cook for 8 hours or until soft, then add the other ingredients (minus the extra water). I tried the stated method one time, and the beans never really softened. Other changes: reduced sugar to 1/3 cup, omitted salt, reduced bacon. My new standard recipe for baked beans!!

Zippy Beef Bake

I loved this! I was so glad to find an easy recipe for a casserole that didn't have cream of mushroom soup in it. I made a few minor changes due to not having some things on hand (cheddar instead of Monterey Jack, white onion instead of green, yogurt instead of sour cream), but nothing major. Definitely going into the regulars!
