Gnocchi with Sage-Butter Sauce

Reviewed: Oct. 22, 2009
I'm rating this on the sauce, I didn't like the gnocchi maybe it was the kind i bought. But the sauce was excellent! 1/4 teaspoon of salt was wayyyy to much for me and i like salt, but other than that i loved. I also added a 1/4 cup of cream just preference. Next time i'll use a different pasta though.

Cheesiest Potato Soup

Reviewed: Oct. 20, 2009
THis was very yum! I used small white potatoes, and rather than pureeing it completely, I used a hand-smasher and took turns with my son mashing up a bunch of the potato. It was nice and think, but not too much so. I also used a whole 2 cups of cheese. . .tasted great!!! Thank you!

Southwest Chicken

This was fabulous! This was a great cheese-free recipe! I only had plain diced tomatoes, so I added a whole can of diced green chilies to the mix. The whole thing balanced out so beautifully! Awesome recipe!

Freestyle Apple Tart

Reviewed: Oct. 12, 2009
My young kids thought the cream cheese was a little overpowering but it was a big hit with all of adults. This actually surprised me given the simplicity and use of so few ingredients. I think the combo of the cream cheese with the apples makes for a interesting flavor. Almost like it better than my current apple pie recipe. Super simple, looks pretty and not too sweet. I'll definitely make this at least a few more times this season.

Balsamic Vinaigrette

It was really good! Would have been better with garlic (I was out) but it was perfectly serviceable as it was! I made it in my little 3-cup chopper, so it was well-emulsified, too!

Easy Key Lime Pie I

This was super easy and delicious! I used a cup of Key lime juice as others suggested but next time i will only use half a cup as stated. It was just a tad to tangy, otherwise perfect fool proof recipe!

Disappearing Marshmallow Brownies

Reviewed: Oct. 3, 2009
These were pretty good, I think i just messed them up by putting them in a smaller pan. The brownies were to thick and would not cook through :( I would probably use the marshmallow idea but with another brownie mix and a bigger pan next time ;)

Carne Adovada

Reviewed: Sep. 26, 2009
I took other suggestions and used "hot" New Mexico red chili and I added two diced, seeded habanero peppers. After marinating it overnight, I put it in my slow cooker with one large diced onion and 1/4 cup water. 8 hours later, it had great flavor and it wasn't too spicy. I took it to work, and had several adamant requests for the recipe. The real compliments came from my hispanic co-workers who thought it was excellent. This is a real keeper!!! Thanks.

Cochinita Pibil

Reviewed: Sep. 13, 2009
Do not be intimidated by the Habaneros, it is actually not that spicy at the end and it needs the kick. I used a 5 pound pork butt roast w/bone. I used 2/3 cup orange juice and 2/3 cup lemon juice, used heaping teaspoons of the spices, added minced garlic. Marinated it overnight and cooked it in crockpot. I used the meat in tacos, thickened the juices with cornstarch to spoon over the meat, topped it with chopped red onion, guacamole and cheese. It was heavenly!!! The flavors were fantastic. A new delicious addition to my regular mexican recipes.

Scrumptious Frosted Fudgy Brownies

Reviewed: Aug. 30, 2009
Bravo, Celeste! These are fabulous. Watch the baking time. I used a metal non-stick pan, set oven at 350 degrees (375 seemed too high for my oven) and took brownies out at 32 minutes. Outer edges were a little dry. Ovens vary so much, 350 degrees is a safe bet, next time I'll take it out at 30 minutes. Followed recipe on frosting, for those who thought it was runny, refrigerate per instructions, stirring it occasionally, it will thicken nicely. The nuts are essential. It is fantastic served with a scoup of vanilla ice cream, it will impress your guests.
