This savory deep-dish pie features herbed feta cheese that melts and mingles in every bite. The cheese is sauteed and mixed with spinach, mushrooms, Cheddar cheese and lots of garlic. This mixture is then combined with milk and eggs, and poured into a prepared crust. A bit more Cheddar cheese is sprinkled over the top, and then the quiche is slipped into the oven until it 's set.

A friend gave me this recipe several months ago. I have tried several variations including using a carrot cake mix with white chocolate chips and chocolate cake mix with butterscotch chips - the variety is endless! Note: I haven't had a great deal of success in storing these cookies more than one or two days. They seem to toughen up rather quickly.

Looks similar to colcannon, but champ is native to the North of Ireland. It's made by blending scallions or green onions with creamy mashed potatoes. Great on it's own, served steaming hot with extra butter which will melt through it. But it's also the perfect side dish for good quality sausages.
