Burrito Pie

Made this tonight and let me quote what my hubby said..."I'm lovin this" The only changes I made were omitted the olives (dont like them), used taco seasoning instead of salsa, and did not mix the refried beans w/ the meat, I layered separately. I couldn't decide if I wanted to use flour tortillas or corn tortillas, hubby a fan of corn and flour for me, so I used a huge casserole dish and on one half I used flour and the other half I used corn. I sprinkled cheddar cheese all over the whole thing and baked. Yummy! I did pre fry both kinds of tortillas prior to layering them. Will most definately make again.

Salsa De Tomatillo

Didn't work for our family, we apparently aren't cilantro lovers. It was way too overpowering. I will continue searching for green hot sauce recipes. If I make it again, I will use dried cilantro, very little of it.

Honey Mustard Dressing II

so quick and easy. my husband couldn't BELIEVE i made it myself. i served it with a fried chicken tortilla wrap and ended up dipping the rest of the leftover chicken in it a few hours later for a midnight snack! i didn't have fresh lemon juice on hand, so i used concentrate, and i added double what the recipe called for...it needed the kick to round off the sweetness. add a pinch of salt, as well. double it for leftovers!!!

Steamed Tuna Fish

Instead of steaming, I pan-seared the tuna, and also omitted the salt for the sauce. I think I used less ginger than the recipe called for, but I didn't measure so I can't be sure. It looked more like a topping than a sauce, but was surprisingly delicious! My husband loved it and called it "num-ilicious"! The liquid part of the sauce was also great with steamed asparagus.

BBQ Pork for Sandwiches

Oh yeah this is good! I used Mildly Wild BBQ Sauce and it was excellent! This is an extremely easy recipe and will most definately make it again. Even my picky 15 y/o son loved it. Just thinking about it makes me want to eat more. Thanks for a great recipe. Tracy from Texas!

Hot Artichoke and Spinach Dip II

i seriously ate half of this by myself! i used 2 cups of drained spinach and didn't use mayonnaise, but instead added the same amount of sour cream. i added the entire amount of mozzarella INTO the dip. i doubled it and it made enough for our dinner group (16 or so) and i had leftovers. the kids LOVED it!

Best Ever Banana Bread

this is a GREAT banana bread recipe. i made it for christmas, and it was gone the second day! i added double the bananas and i only mashed one cup - i coarsely chopped the second cup. make sure to use really really brown bananas!

Gerry's Chicken Enchiladas

YummmmmY! These were the BEST chicken enchilads. Even better than the ones we get from the restaurants, a whole lot better. I did make some teeny tiny changes. I used flour tortillas because that's all I had and I'm glad I did because they made this dish perfect. I didn't use black olives because I don't like them. Didn't have stewed tomatoes so I used a can of diced tomatoes. Didn't have any chili peppers, I sprinkled cayenne instead, We like it spicy. These did not take as long as some of the others said. My husband sure did love them, he commented several times how good they were. I most definately will make these again real soon, the sooner the better! I think they're worth 10 stars.

Greek Orzo Salad

Tangy Slow Cooker Pork Roast
