Burrito Pie

What a great recipe. I omitted the olives as my family doesn't care for them. I also split it into two 8x8 pans and made one with cheese and one without for a friend who is allergic. It was good even without the cheese. Sooo yummy! We just ate leftovers of it and they tasted wonderful too.

Sour Cream Pork Chops

I loved this recipe. Not really a pork fan so was looking for something different. Instead of following the recipe I did my own touches too. Instead of just plain broth I also added a can of Cream of Mushroom soup. After taking the chops out of the pan I put the onions in to saute them with the soup. I added salt and pepper and the bouillon and water. I poured it over the chops put it on high for 5 hours. Served it over egg noodles. Husband loved it.

Tex-Mex Beef and Cheese Enchiladas

Added onions to the cheese - otherwise followed exactly - excellent!!!! My parents are huge mexican food fans - they both said best enchiladas they have ever eaten!

Raspberry Barbecue Sauce

Something that you might try is to cut out the fresh raspberries and use 12oz of raspberry liquior. the alchol will burn off so dont worry about children eating it. by cutting out the fresh raspberries you wonty have the seeds.

Ginger Glazed Mahi Mahi

Pretty good. I may have marinated the fish too long, but it turned out alright. The sauce is wonderful, but the fish is rather bland without the extra sauce on top. I'm thinking to save time I should just bake the fish and pour the sauce on top after reducing it.

Seven Layer Taco Dip

I layered: Taco meat (hamburger seasoned w/ taco seasoning), refried beans, diced tomato, diced onion, sour cream, cheddar cheese,& salsa. I dont like olives (reason I gave 4 stars), & didnt use cream cheese. This recipe is always a big hit.

Nana's Squash Casserole

I don't know why I said chopped squash... I meant cooked. Anyhow, you can use 3 cups of squash if desired. I found it does help to use a little more than 2 cups. Also, yes, you can sustitute butter and margarine out, AND cut back slightly if you choose. I add more cheese than the recipe calls for as well. The only other thing I wanted to say.... someone said they cut out the sugar. It's only a SMALL amount, and the sugar helps the flavor come out in the dish. Anytime you add sugar to a salty dish, it helps accentuate the flavor of your meal. I learned this from my grandmother as well. :) I hope I helped fix my recipe... there's no edit button. haha.
