Pasta e Fagioli a la Chez Ivano

Reviewed: Dec. 20, 2008
Just FAB. Freezing today and damp in VA and I threw this together. I didn't have consomme, so I used water and beef base. Cooked the pasta seperately, dumped it in at the end. Served with Parmesan. The house smelled wonderful! Just a note. The Italian kidney bean is cannelli bean, so that is what I used. Next time I think I will use half Italian sausage and half ground meat next time.

Baked Potato Soup

Reviewed: Dec. 3, 2008
Great recipe with the suggested changes. I put four stars because you do have to change some things. I tripled the recipe. Here is what I did: I used better than bullion and made the appropriate broth. I also added another potato. I peeled and cut the potatoes and let them cook in the broth. I used half a sweet onion, stalk of celery, carrot, and three cloves of garlic. I added a little extra flour, only used about a t of basil. And, when the cream was needed, I added 2 cups, half the amount, of whipping cream. The whole family loved it. Oh, and I used green onions instead of parsley. Definitely a keeper.

Easy Texas Chili

Reviewed: Dec. 1, 2008
ok... first i must say that real texas chili does not have beans.......not bad for a starter.... but i made these changes.... i used extra lean chili meat instead of ground beef, 2 cans of rotel tomatoes instead of the tomatoes and the tomato sauce,1 galic clove chopped instead of garlic powder, 2 teaspoons of cumin powder, 1 teaspoon of cayenne pepper and 1 can of beer.....

Kalua Pig in a Slow Cooker

Reviewed: Dec. 1, 2008
I lived in Hawaii for three years and have been searching for a recipe like this. Everyone agreed that it tasted JUST like the Kalua Pig we had there. I could not find the Hawaiian salt, but I used regular sea salt and it tasted just fine. I didn't even have to shred the meat. It fell off the bone and was so tender.

Oven-Barbecued Pork Chops

Reviewed: Oct. 21, 2008
This was really good. Like other reviewers I too added a few spices to kick it up a little. I added red pepper, onion powder and some garlic salt. I also upped the amounts of Worcestershire, the brown sugar and vinegar(I used white wine vinegar since that is what I had on hand). I agree with the other reviewer who thought this would be a good sauce over chicken! I would have given this 5 stars if it were not for the additions...but over all very yummy and very easy!

Chili Rellenos Casserole

Reviewed: Sep. 18, 2008
very good after a few tweaks... i added 1 lb ground beef, cooked with chopped onion, i used only 1/4 cup milk, 4 cans la victoria mild fire roasted chile peppers, 4 eggs, chunky salsa instead of tomato sauce, and blended mexican cheeses..... i will fix this again but we really did not like having a huge taste of chile peppers in one bite so the next time instead of layering... i will combine all ingredients together, bake for 30min, then add salsa and remaining cheese on top...... thanks for the basic recipe....

These are so yummy. But warning be careful when you go to eat them that they've cooled off enough, the cheese filling will be hotter than you think. I burned the roof of my mouth. OUCH!

Italian Sausage Fried Rice

Reviewed: Aug. 7, 2008
This was not my favorite. I made it like the recipe said and learned I do not like Italian sausage. While the flavor was good, I think it would have been better with a different kind of sausage. Next time I'll try this with a different kind of sausage, maybe smoked sausage of some sort.
