Chicken Spaghetti II

This was pretty tasty! After reading reviews, I too cut the cheese back to 1/2 a pound (light velveeta), and I think it could still use a little less. And don't get me wrong, I LOVE cheese! Still, a very enjoyable comfort food. Next time, I think I might try it with cream of mushroom soup instead. It just felt like that mushroom flavor was missing.

Slow-Cooked German Short Ribs

While I liked the flavor of the sauce (it was great over mashed potatoes), the ribs were too over cooked for my taste. After stewing for 8 hours, it was difficult to tell the good meat from the fatty stuff. Might make again with a different kind of rib, and cook for less time.

Smothered Hamburger Steak

This recipe probably won't blow anyone's mind, but it's still pretty good for how simple and quick it was to make. The only different thing I did was to add half of a beef bouillon cube to the sauce mixture. The gravy is great over mashed potatoes with green beans on the side. I'm sure we'll be having this quickie dinner again, thanks!

Delicious Chicken Casserole

Good and simple meal for a weeknight dinner. I also added an extra cup of rice, shredded cheddar, and some frozen mixed veggies. I didn't add the butter to the crumbs, probably good, but didn't think it would be worth all the extra calories. Very good, even my casserole-hating boyfriend liked it and cleaned his plate. Thanks!

Fabulous Wet Burritos

Absolutely fabulous! I have made this dish at least 4 times and it is excellent. Make sure to use salsa instead of the tomato soup in the sauce that goes over the burrito.

Fried Dill Pickles

Numnumnumnumnum!!! These were excellent (and I've had a few fried pickles in my lifetime!). The batter stuck nicely to the pickles, which is a problem we've had in the past with other recipes. We used Claussen pickles and sliced them a little (just a smidge) thicker than your normal pre-sliced pickles. I would recommend after dipping in the egg mixture then the flour, wait about 20 minutes or so, then dust with a little more flour. We also tried this batter with some jalapeno slivers (even better than the pickles I think). We'll be making these often, thanks!

Baked Ziti IV

OMG! This was fantastic! I made a few minor changes... first, I used a homemade pasta sauce instead of a jar ("Best Marinara Sauce Yet"- yummy! also from this site), and I added a little fresh oregano and fresh basil to the meat mixture. My boyfriend flipped over this meal!

Fish Tacos

Pretty good, like others have said, the sauce was the real superstar here. The only change I made was to use sour cream instead of yogurt because that's what I had on hand. I did have some problems with the batter not sticking, but I think that was an error on our part... we don't fry a lot and didn't know what we're doing. Will probably make the sauce again and serve over grilled fish next time! *UPDATE* I've made these a few more times since then, and I've just been making frozen beer battered fish fillets. We didn't miss the taste or hassle of breading and frying our own fish. Once again, the sauce is a-m-a-z-i-n-g, give it a try!

This was pretty good. Very simple but tasty. However, this makes waaaaay more than two servings, more like 5 or 6. I think that would cut back the calorie content quite a bit. By my calculations, it should only be about 250 calories for 5 servings. Not too bad!

This looks good on paper, but the end result is just meh. I think it would have been better if the stuffing was a little cheesier or something, the sausage stuffing was just a little odd. Oh well, it was worth a try!

Spaghetti Salad III

This was really, really yummy! I agree with other reviews and used McCormick Salad Supreme instead of italian seasoning, and I doubled the amount. I cut the recipe in half and it still made a TON of pasta that me and my boyfriend both munched on for a whole week. I also lightened things up a bit by using light zesty italian dressing and Ronzini Smart Taste Rotini pasta (180 calories per serving!) Good stuff though, nice and light!

Chicken Creole with Chile Cream Sauce

I've made this many, many times and I never get sick of it. I only make a few minor changes: first, I saute chicken tenders (instead of whole breasts) and slice them into bite sized pieces. Next, I double the sauce to serve over pasta, and usually add a little extra cajun seasoning to the sauce as well (I like it spicy!) And lastly, I usually add a can of cajun veg-all to the sauce. Delicious and simple!

Parmesan Broccoli Balls

Mushroom Wild Rice

We really enjoyed this. It went great with the Halibut with Cream Sauce recipe also on this site. I baked mine at 400 for an hour covered, then about 15 (give or take) more minutes uncovered.

Cabbage Fat-Burning Soup

This was really, really good. It does taste like minestrone, my boyfriend liked it too. I don't know about eating it for three meals a day everyday, buy I could definitely do this for lunch everyday! I added two cloves of garlic, fresh basil, oregano, a zucchini, and a can of chick peas (don't think that will hurt the calorie count too much!).
