My husband and I have a blended family with 5 children: ages 2 months to 19 years old. I stay at home with my youngest and my 2 year old right now and work part time two days a week in the evenings. My husband works out of San Antonio and is lucky enough to work from home 2 days of the week. Our children are our world!

Baked Ziti IV

OMG! This was fantastic! I made a few minor changes... first, I used a homemade pasta sauce instead of a jar ("Best Marinara Sauce Yet"- yummy! also from this site), and I added a little fresh oregano and fresh basil to the meat mixture. My boyfriend flipped over this meal!

Fish Tacos

Pretty good, like others have said, the sauce was the real superstar here. The only change I made was to use sour cream instead of yogurt because that's what I had on hand. I did have some problems with the batter not sticking, but I think that was an error on our part... we don't fry a lot and didn't know what we're doing. Will probably make the sauce again and serve over grilled fish next time!

This was pretty good. Very simple but tasty. However, this makes waaaaay more than two servings, more like 5 or 6. I think that would cut back the calorie content quite a bit. By my calculations, it should only be about 250 calories for 5 servings. Not too bad!
