Roasted Chicken with Risotto and Caramelized Onions

Made this for dinner last night and I thought it was very good. I followed the advise of others and cut the vinegar back to 1/8 cup, I could see where 1/4 cup would overpower the dish and added some chopped garlic while cooking onions. My picky teenager even said she liked it.

Deb's Scallops Florentine

Great dish. Followed advise of others and did not boil scallops. I put fresh scallops in bottom of baking dish then topped with Old bay, fresh garlic, fresh baby spinach, some cooked fettuccini then poured the cream sauce over and topped with the cheese. This is a keeper. Thanks

Mexican Bean Salad

Loved it! I made this for a party and received tons of compliments. The only modification I made was using half a red onion versus a whole one. Following the suggestions of other reviewers, I also used a can of corn (drained) instead of frozen.

Tomato-Curry Lentil Stew

This was great! I more/less quadrupled* the recipe to have enough for the family, and everyone loved it... including the kids! Absolutely fantastic, and we'll definitely do it again. *I used a 1-pound bag of lentils and multiplied other ingredients except the celery and garlic accordingly. Two ribs of celery plus a fistful of leaves was sufficient, and I didn't dare throw in more than four garlic cloves. Results were outstanding!

Impossible Buttermilk Pie

This was a very easy and tasty recipe. I am sure I will be making this alot this winter. Made it exactly as the recipe called except for I didn't drain the kidney beans but, I did the pinto.

Chocolate Zucchini Bread I

Awesome way to sneak some veggies to the kiddos!! As usual, I substituted like crazy. But anything that I did would have only made it taste worse, and I thought it was incredible even after I sub'd it to death. I used all whole wheat flour, I cut the oil to 1/4 cup & added 1 cup of applesauce. Then I added 3 Tbsp of molasses & used raw sugar (which I cut to 1 1/2 cups). Also, I didn't have squares of chocolate, so I sub'd 6 Tbsp of cocoa powder & added it to the dry ingredients. So even after all of those healthnut changes, it turned out delicious. And it's even better if you sprinkle some mini chocolate chips across the top of the loaf when you pull it out of the oven. Mmmmmm...

Grilled Chicken Breasts with Fresh Strawberry Salsa

We really liked the chicken- thought it was a super yummy marinade, but the strawberry salsa was just okay. We thought it had way too many flavors going on- fruit, chiles, onion, mint- too much. Will proabably make the marinade again because we liked it so muhc, but will leave off the salsa or just use plain ol' strawberries with a little bit of sugar.

Asian Orange Chicken

This dish was super yummy! My breading did not stay on very well, but it didn't matter, it was still super yummy. The only changes I made (as suggested by others) were to use some sesame oil in addition to the olive oil and to only use 2 tablespoons of cornstarch to 1 tablespoon water. And I used ground ginger because I could not find fresh ginger root in the store. This one's a keeper!

Scottish Shortbread IV

Good recipe! Lovely, except, you do not dip scottish shortbread in chocolate!!!!!!!!! I would know, I'm from scottland, and good shortbread shouldn't need that. Trust me, just dust with sugar and stick to the recipe.

Fabulous Fudge Chocolate Cake

What a shame! The batter was DELICIOUS! :) Then I cooked it... I feel bad rating this so low because it must have been a mistake on my part. Perhaps I put it too high in the oven... Anyway, The outside and top went rock hard and the middle stayed completely mushy! I just couldn't eat it, my dad good-naturedly gulped down his portion but it was pretty gross. No offense to the origional author, though...
