Black Bean Salsa

Big Soft Ginger Cookies

Chewy Sugar Cookies

Super yummy sugar cookies! The whole gang loved them! I too used butter instead of margarine and I put them in the fridge for about an hour. I did not have trouble with the dough being sticky or hard to handle. I rolled the cookies in a multi-colored sugar/ cinnamon mix to give them a snickerdoodle taste for the kids. For the adults, I ploppped the dough by the spoonful (didn't roll them into balls at all) and iced them with gingerbread flavored icing after the cooled. They turned out great both ways! They did seem to spread pretty thin after baking, but they were super tasty!!

Spanish Chicken

So yummy! The rice was excellent! It made great leftovers the next day- I shredded the leftover chicken and stirred it into the rice mixture. yummy! I did add a few dashes of cinnamon even though many reviews did not seem to care for it, and we all liked it! I used more like 2 teaspoons of chili powder too.

Incredibly Cheesy Turkey Meatloaf

Big hit with adults and kids! Made the following changes, as suggested by many viewers: 1. let milk absorb bread crumbs before adding to mixture 2. added onion and garlic 3. added 1 tablespoon Worstershire sauce 4. used barbecue sauce on top 5. used shredded cheese 6. used two seperate pans People could not believe it was turkey, as opposed to beef. Very yummy, easy and quick to make.

Spicy Black Bean Potato Salad

Restaurant-Style Buffalo Chicken Wings

I have made these a few times now and everyone LOVES these. I tried as written and I have tried it with the breading then eggs wash and breading again. I like it the best with breading it twice (no egg wash) I bread it once put in the fridge for about 3-4 hours and bread again and the re fridge for another 3-4 hours. These are just 100% awesome. I tried the sauce today with 1/3 butter and 2/3 Franks buffalo hot wing sauce. It's all good. When I am making these for a crowd, I deep fry them the day before for 6-7 minutes @ 375. The next day I put them in the oven @ 375 for 10-12 minutes. Thanks for the recipe.

Slow Cooker Pulled Pork

I used country style pork ribs because they were on sale and I bought a family size package for under $6.00. I cut the meat away from bone and some of the fat off before throwing in crock pot with rootbeer. Drained liquid, shredded and added a bottle of bbq sauce. This has got to be one of the easiest, cheapest and best tasting recipes around. Just threw some on hamburger buns with thinly sliced onion and pickles.

Banana Crumb Muffins

I normally don't review a recipe if I change it a lot, but I saw another reviewer looking for ways to add nutrition to these, so I thought I'd throw in my 2 cents. Because, these are obviously great as is, but I wanted folks to know they were very forgiving when you play around with them. These were wonderful, even after all my subs! I used 1 cup whole wheat flour & 1/2 cup white, plus 1-2 tbsp of wheat germ. I added cinnamon and nutmeg to the dry ingredients, cuz mmmmmm...I just love 'em. I replace the white sugar with mostly raw (turbinado) sugar & about a tbsp each of brown sugar & molasses. I added an extra egg to help make up for the wheat germ I added. I also used oil instead of butter & apple sauce to replace about 1/3 of the oil. And I mixed in about 1/2 cup of chopped pecans into the batter. They came out moist and very flavorful. YUM!!!

Awesome Slow Cooker Pot Roast

The whole family loved it!! I took other's advice and used 1 1/2 cans mushroom soup, beef broth instead or water and I seared the roast in a pan with salt, pepper and garlic powder before placing in the crock pot. Super yummy!

Enchilada Stuffed Shells

This was a huge hit with the whole family! I used bowtie noodles since I didn't have shells and made it more like a casserole. The taste was really good- it had a "hamburger helper" taste to it. Will make again since the kids and husband loved it.

Chocolate Chip Banana Muffins

These were so moist and so yummy! I took the advice of a lot of other reviewers and made these changes: 1 cup white flour and 3/4 cup whole wheat flour. 1/4 cup white sugar and 1/4 cup brown sugar. 1/4 cup vegetable oil and 1/4 cup applesauce. Used banana flavored yogurt. Used 3 ripe bananas. And used 1 cup milk chocolate chips. Highly recommend! Yummy!
