Pumpkin Cookies I

Reviewed: Nov. 14, 2009
This cookie is awesome. The combination of the pumpkin and the oatmeal is excellent. They turn out crunchy on the outside with a soft chewy center. Sprinkled with powdered suger mixed with ginger, cardamom, and cinnamon to give it a little extra something, but it really didn't need it.

Brownie Oat Cookies

Reviewed: Nov. 5, 2009
This recipe was great. Very chocolaty, a bit cake-like, and delicious. The only thing I changed is that I used Agave Nectar instead of corn syrup, because that's all I have. They turned out great, and the mix was just the right consistency. These are so easy; I'm sure I'll make them again and again.

Tater Tot Casserole II

Reviewed: Nov. 1, 2009
My husband wanted me to make this and he really enjoyed it. I didn't care for it much, but just because I'm not a huge fan of tater tots. I added 1 lb of seasoned ground beef, and put it on top of the tots. Easy, and inexpensive. 4 stars because hubby devoured it :)

Yeast Dumplings

Reviewed: Sep. 14, 2009
Yep, these were delicious! These are the dumplings I have been looking for. Actually, they were different than what I was looking for... but better than anything I have tried! I cooked about 12 minutes, and followed instructions exactly other than that, adding them to my normal chicken and dumpling recipe. I agree with poster who said they were too large, though — I would probably cut 1" x 2" squares next time and maybe roll the dough a little thinner than 1/2" -- but will definitely make these again.

Perfect. We love this dish, and I really love the simplicity of it! I didn't have parsley, so I added a sprinkle of dried oregano. Quick, flavorful, and elegant. You can't go wrong with this one. Thank you Amber!

Mini OREO Surprise Cupcakes

Reviewed: Sep. 13, 2009
I enjoyed making these, and they turned out wonderfully! I found that you can use more than 1/2 tbsp of filling in each cupcake like other reviewers had mentioned. I used a chocolate cake mix, and topped with Whipped Cream Cream Cheese Frosting from this site, and was more than pleased with the final product. The cupcakes had just the right amount of oreo/cream cheese taste in each one. Will be making again :)

Tacos in Pasta Shells

I liked the idea of this, but just wasn't overly impressed after making them. I followed the recipe exactly, but mine came out slightly bland and somewhat dry. If I make again, I'll be changing up the recipe to incorporate more flavor and more creaminess.

Pumpkin Parfaits

YUMMMMMY! Simple, and very pretty too! I gave this recipe a test-run today to see if it would be something I'd like to serve during the holidays and I was thrilled with the way the parfaits turned out! I didn't have gingersnaps, but will for sure add them next time. Can't wait to serve these in the upcoming months :)

Marshmallow Fondant

Wow. If I can make this, I swear anyone can. I used my KA mixer to mix it, then took it out to knead it a couple of times. I covered my hands in crisco and just added the powdered sugar until it quit sticking. Just don't be stupid like me and add food coloring without wearing gloves.. My hands were red for a day or so.. Only I would do something like that. :) I encourage all of you to try this.

We made this to go over grilled chicken, and it was very good. I think for our own personal taste I will use less beans next time (and I do love black beans). I just liked the other flavors better and wanted more of them! Hubby even said he'd like this as a side dish. Will be making again!

Melt - In - Your - Mouth Shortbread

Reviewed: Aug. 9, 2009
These are quick, easy, and do melt in your mouth. Very impressed for such simple ingredients. After eating one that had just come out of the oven, I found they tasted better after they had been sitting out for a little while. I changed nothing about the recipe and used the same temp that it called for. I rolled them into small balls and baked for about 12 minutes. Topped with a little vanilla glaze just for fun.. Thanks Jennifer!

Cream Cheese Cookie Cups

Reviewed: Aug. 4, 2009
Had to give this 5 stars for several reasons. They are super simple to make. Require very few ingredients. And they are just adorable! They are rich, but what isn't rich with cream cheese in it!?! I followed the recipe, but doubled the filling so I could use the entire 18 oz. cookie dough roll. This made 24 mini cups. And I also sprayed my pan with baker's joy before putting the dough in. Out of curiosity I added cocoa powder to a portion of the cream cheese mixture to see how they'd taste with chocolate cream cheese filling, and I liked it alot:) Like the previous reviewer, I topped with mini choc chips. Will try m&m's next time like the submitter suggests. Will be making these again. Thanks Rachel!

Raspberry Chipotle Sauce

Reviewed: Aug. 1, 2009
This was easy to make, and tasted really good. I may cut back next time on the apple cider vinegar, just because we really tasted it, more so than the other flavors. But we still enjoyed it alot! I used one jumbo jalapeno and the heat was just right, and also used frozen raspberries. (The fresh ones at the store looked awful!) Made this to go on grilled chicken sandwiches with jalapeno havarti cheese, and this sauce complimented it nicely! Think it'd be great over a block of cream cheese with crackers, and can't wait to try it on other meats. Thanks Holly :)
