Sweet Coated Pecans

Reviewed: Dec. 19, 2009
These are excellent. I made this with whole almonds. My changes: I used 1/2 white and 1/2 brown sugar; only 1 T water; added a splash of vanilla; and the zest from 1/2 an orange. Very yummy. Try this, you won't be disappointed.

Nauvoo Gingerbread Cookies

Reviewed: Oct. 28, 2009
Excellent! I make several batches of these during the holidays and the guys just eat them up. I drizzle them with mom's thin butter, milk, and powedered sugar frosting and it makes them even better - if that is really possible. My mother has even abandoned her old gingerbread recipe for this one!

Mint Chocolate Cake

Reviewed: Oct. 28, 2009
Sadly these tasted like am incredibly potent chocolate candycane. I was curious as to why these are called mint brownies and are colored green when the recipe calls for peppermint extract? I used only the 1/2 teaspoon peppermint extract in the frosting and none in the topping and it was still overpowering and just plain bad. We all ended up scraping the green frosting off and just eating the cake :( I did take the advice of one user and used the Hershey's classic chocolate cake recipe for the first time and will forever use that as my chocolate cake because it was so deliciously moist. At least something good did come out of this recipe. It was a great idea though.

Puff Pastry Salmon

Reviewed: Oct. 28, 2009
As a fan of beef wellington I just loved this idea! Changes were: I used 5 good sized salmon fillets placed them onto one sheet of puff pastry piled on the feta cheese, the powders as mentioned, and LOTS of fresh spinach then placed the second patry sheet on top of the fillets, stretched it out a bit and sealed it with the tines of a fork with the bottom pastry sheet. Moving it onto the baking sheet and off takes some doing this way, but it saves on the calories. Cook this on a cooling rack placed on baking sheet, otherwise the bottom may get soggy. This recipe is SO simple and EVERY person I have served this to loves it. Thanks!

Banana Crumb Muffins

Reviewed: Sep. 15, 2009
I did this exactly as described, except I did them as mini muffins. This is a good basic banana muffin recipe, but I did not find it to be anything new or unusual. The crumb is nice, but kinda overpowers the banana flavor. The banana flavor was nonexistent just after baking, but developed overnight and was better the next day.

You definitely would not miss the sugar if you reduced it by a cup or so. Served this at a luau-themed party and we mixed it with coconut rum, everyone was crazy for it. I get requests to bring "the punch" to events all the time, now!

Chicken Breasts Stuffed with Perfection

Reviewed: Sep. 2, 2009
When I found this recipe I got very excited. Despite the fact that I did not have most of the ingrediences and tried to make them up myself - it was delicious. I can imagine that when done according the original recipe it rocks! (I made my breadcrumbs mixing plain breadcrumbs, parsley, salt, peper and parmesan. Instead of goat or feta cheese I cut tiny cubes of mozzarela cheese and mixed it with sour cream. I also did not have Italian dressing so I made my own following one of the recipes posted on All recipes) As a side dish I recommend Red Garlic Potatoes posted by MARDI1030. It went perfectly together. If you have kids that like canned fruit - try to serve it with tangerines :-) Yummi

Quinoa Pilaf

Reviewed: Aug. 11, 2009
Sorry JBUCK123 - 3 stars for you - 5 stars for me. I changed this so much it isn't the same recipe - BUT I'll give you credit because I used your recipe as the basis for mine. I started by rinsing the Quinoa a couple of times and then soaking it while I fried 1/2 onion with garlic in olive oil and when it was brown added about 1/4 cup of white wine (allowing for the alcohol to burn off), then added carrots, chicken broth and the quinoa. Before serving I added the walnuts. NO bitter taste. This is the first time making and eating Quinoa - thanks for getting me started and achieving 5* results.

Burgundy Pork Tenderloin

Reviewed: Aug. 7, 2009
I really wanted to love this recipe because it's so easy and how bad can wine and gravy mix be? I was disappointed in the flavor of the sauce as well as the consistency; I had to boil it for a few minutes to get it to a decent consistency after I removed from the oven. The color of the meat from the red wine was also unappealing. Thank you for sharing, but I won't be making this again.

Mushroom Chicken Piccata

Reviewed: Jul. 23, 2009
Yum! I'm not big on lemon flavor....but this was nice - with a hint of lemon. I had a couple of alterations - like deglazing the pan with the wine after frying the chicken and then making the sauce....and I didn't add the corn starch - I'd rather the flour from the chicken thicken the sauce. This was really good, I'm looking forward to leftovers when the flavors meld.

Cheesy Chicken Meatballs

This recipe was pretty good. I substituted shredded cheddar cheese for the parmesan cheese and added some green onion that I was looking to get rid of. They weren't the best, but there weren't any left either, so I think it's safe to say everyone enjoyed them.

Sugar Cookie Icing

Reviewed: Jul. 21, 2009
This recipe is easy to make and easy to adjust according to what you wanna do - pipe or flood fill inside the piping. And it's yummy, especially on cookie cutter cookies that need an extra bit of sweetness! It spreads evenly and dries smooth and glossy, like professional cookies, I will definitely be using this when I want this type of cookie/icing pairing again!

Italian Spaghetti Sauce with Meatballs

Reviewed: Jul. 18, 2009
This recipe is one of the favorites I have found so far for pasta sauces, and I have tried quite a few in the past few months. I did make some adjustments (as does everyone on this site). I used 2 28 oz cans of crushed tomatoes (not whole tomatoes) - mostly personal preference. When making the meatballs, I used 1/2 cup of crushed Club crackers because I ran out of breadcrumbs (had like 1/8 of a cup or something... so useless!) I then added 1/4 cup of milk to the meatballs. Oh, and I also used 1/2 lb ground pork and 1/2 lb ground beef as well as fresh parsley (didn't have any dried on hand, and fresh is so cheap anyway). I cooked the meatballs in the sauce, which I agree was a great method of cooking. This recipe is fantastic, and I will use it again. Thanks!!

High-Protein Torte

Reviewed: Jul. 18, 2009
You have to be open minded with this recipe, because the finished product has a distinct texture, that isn't cake or pie. I'm trying to eat "heart healthy" so the low sugar - high protein is great. I did alter a bit - I used 1/2 cup splenda brown sugar blend - and I found it a bit too sweet. Also, instead of pumpkin pie spice used 1 tsp cinnamon, 1/2 tsp ginger and 1/4 tsp cloves - plenty spicy, not bland at all. I did notice there was no salt and I added 1/2 tsp to balance the flavors. Oh, and maple sugar? Ended up using maple syrup instead. I don't know whether I'd make it again - unless if needed for gluten free dessert. There's just this after tast when you cook splenda that I don't care for.
