Golden Dinner Rolls

Reviewed: Jan. 7, 2010
Yummy! I did use butter instead of shortening. And I had to add an extra 1 1/2 cups of flour as well. No biggie. My family loved these rolls though. Hubby said they were second to my aunts rolls. That's a really big compliment from him! Very soft and fluffy and I loved the flavor. Thanks!

Salsa Chicken Rice Casserole

Reviewed: Jan. 7, 2010
This was delicious. I have to say I didn't make it according to the original post, but wow, my whole family just inhaled it. I took the rice down to 1 cup and took the water down to 2 1/4. I opted to cook this on the stove top. I added garlic and pepper. I cut the chicken into chunks and sauted this in a tiny bit of olive oil with 1/4 tsp. cumin until it was almost brown and then added 1/2 chopped green pepper, 1/2 red pepper, 1/2 onion and 1/2 fresh mushroom. I kept the original cheeses and the original amounts. I added the cream of mushroom and omitted the cream of chicken. I just threw everything together in the 9 x 13 in dish and just stirred it all together. I baked for 20 min at 350 degrees. My kids even went nuts!! Thanks for sharing!! This would be great with almost any veggie combo. I'll be putting broccoli in next time and my children have requested this with peas!!

VERY Waistline Friendly Turkey Chili

Reviewed: Jan. 6, 2010
Yum! Great for a quick week night meal. My kids and husband all enjoyed it. I did have to use Great Northern Beans instead of the Black Beans because I ran out of the black beans without realizing it. This will be one of the meals I keep ingredients on hand for! Thanks Christina :)

Baked Potato Soup

Reviewed: Jan. 6, 2010
This is good, but I changed a couple of things. I made extra bacon, used heavy whipping cream instead of half and half and pureed the soup once it was done. Really good in a bread bowl or with crusty bread and a ceasar salad.

Colleen's Slow Cooker Jambalaya

Reviewed: Jan. 5, 2010
I used everything the recipe called for, straight and unaltered. Definitely too much soup. The flavor was very, very good though. I think I'll drain the tomatoes next time. I'm jealous of all who have instant rice on hand. I made rice separately, and poured this jambalaya over, letting the soup flavor the rice. The picture I posted is from today, day two. I made rice using 2 cups of soup from the leftovers. If I had to guess, I'd say there was about 5 cups of excess soup (for anyone that's thinking of putting rice into it).

Very good. Loved the flavor of this bread. Very easy to work with too. I made small hoagie size loaves that we used for meatball subs. Yummy! I don't think I'll be buying hoagie rolls again! Thanks for the recipe!

Oatmeal and Wheat Flour Blueberry Pancakes

Reviewed: Jan. 4, 2010
These were pretty good. I did use 2% milk instead of soy since that is what we always have. Also added some vanilla and subbed applesauce for the olive oil. They did taste really good and puffed up very nicely. The problem I had with this recipe is that it is so liquidy it takes the pancakes forever to cook. I'm used to pancakes cooking a lot quicker and so I didn't plan out my time very well. Thanks for the recipe I will be making this again!

Beignets

Reviewed: Jan. 4, 2010
Yummy! I don't have anything to compare this to since I've never had a beignet before. But these are so good. Lightly crispy on the outside and soft and yummy on the inside. I didn't have any evaporated milk and I was out of milk so I used heavy cream, its all I had. Also subbed butter for the shortening. Again because its what I had. The dough is super sticky so make sure that you really flour everything real well or you will frustrate yourself trying to scrape the dough off the table and the rolling pin and yourself!

Zucchini Casserole

Reviewed: Jan. 4, 2010
I made this scaled down for 3-4 people. I only had two zucchini's and didn't know what to do with them. I did not pre-cook them and they came out tender and not mushy. I used italian seasoned bread crumbs for a topping because it was what I had on hand. After I baked at 425 for 20 min I added 1/2 cup of mozzerella on top because I love cheese! I think it came out perfect and a great change from my plain old steamed zucchini.

This has become my second favorite recipe for chocolate cake. My favorite is chocolate melting cake from Carnival Cruises. The icing/glaze is what makes this recipe! I would like to make it with homemade chocolate cake as well....can't wait.

Buffalo Chicken Wings II

Reviewed: Jan. 2, 2010
These were FANTASTIC! I used chicken thighs instead of wings, dredged them in a combination of 1/3 c breadcrumbs & 1/4 c flour and baked them at 350* for 30 minutes on each side and they came out PERFECT! Loved the hot sauce - I used Tabasco and the whole family thought the combination of butter, vinegar, hot sauce & salt was unbeatable. I did make extra hot sauce (1 T butter, 3 T vinegar, 3 T Tabasco, and 1/4 t salt) and put the extra sauce on the table so we could dip our chicken pieces in it...A definite keeper of a recipe! Can't wait for football season or a reason to entertain - these are definitely going to be a mainstay in my kitchen!!

Chocolate Crinkles II

These were great! I followed the recipe exactly and they turned out perfectly, though I did have to cook them for about 15 or so minutes cause they didn't look done. But they tasted like a brownie soft and moist. Once I mentioned the word brownie they were gone in minutes from my holiday tray!
