Beef Tenderloin With Roasted Shallots

I didn't use the shallots as I could find them ,but the sauce was the best I have ever had. I used a 2000 red Italian dessert wine we have had for years since it was Sunday and I couldn't buy port. This was fabulous as leftovers too! It took me over 2 hours to reduce it but I would do it again in a heartbeat! Served with roasted potatoes. I cant wait for an opportunity to make this again.

Cream Cheese Pound Cake

I agree that it is really sweet but good with milk. I added vanilla just because everything should have vanilla. I havent tried it next day yet since I made it today but cant wait. We swirled leftover Nutella thru it just for pretty factor. Dont have a bundt pan so I made it in a bread pan. It tool almost 2.5 hours to cook but soooo good. I just watched it while I made Catherine's Spicey Chicken soup. Awsome!

Catherine's Spicy Chicken Soup

I didn't even bother to thaw the chicken. I just put the frozen breasts in the pot to simmer and it was fantastic. This is absolutley wonderful! Definately simmer a long time to meld the flavors. Serve with crusty bread and you have a fabulous fall evening!

Enchiladas

I've been making enchiladas similar to these a long time. The hint I would offer is that you place the tortillas in a damp kitchen towel, place in microwave oven and heat for approx. 1 to 1 1/2 min. Much easier than method recommended and much more figure flattering!

Slow Cooker Beef Stroganoff II

I forgot to do this before I left for work so I did it on the stove when I got home. Combined soup, boullion, flour and water. Added a small can of mushrooms for texture and frozen italian meatballs because it was the only meat I had for quick use. I let it simmer over med high about 30 minutes till reduced by almost half then added the sour cram and served. It was sooooo creamy and flavorful!

Sloppy Joes II

WONDERFUL, WONDERFUL!!! Have tried several sloppy joe recipes and this is by far...THE BEST!! Only change I made was to reduce brown sugar by half (we didn't like it so sweet) and add 1 TBLS Worcheshire sauce. This is now THE recipe for our house.

Herb Roasted Pork Loin and Potatoes

This was awesome. Searing is an absolute must! Go easy on salt as other spices enhance it's salty flavor. Mine was a perfect 160 degrees after 55 minutes.

Easy Texas Chili

LOVED THIS CHILI!!! DH said it was the best I'd ever made. Only changes I made was to cut recipe to half (only the 2 of us) but did use 2 lbs. meat. Used 1 can chopped tomatoes, 1 can Ro-Tel Mexican tomatoes and 1 14 oz can tomato sauce. Cooked in slow cooker on high for 1 hour and on low for 5-6 hrs. Will made this my main chili recipe.
