Beer Butt Chicken

It's hot down South; so cooking outside is good for me and my A/C bill. This chicken was hands down the best I have ever cooked. Like everyone else, I spice according to my taste. I used a dry rub under the skin with 1 tsp sage, 1/2tsp each of garlic salt, black pepper, paprika. I also put rub on the outside dry, then (on the outside) I added about 3T butter (olive oil next time) to the rub for basting. Beautiful brown. Apple slice in the neck and inside the cavity with the can. Apples in the dripping pan with a splash of beer to get the liquid started. After that drippings do the work. Basted every 30 min. Cooked @ 300deg on indirect heat grill for 2 hours for 4# chicken. Kids almost ate the bones. Using bones to make broth for Chicken and dumplings. Mmmmmm.

Paprika Chicken with Sour Cream Gravy

I wish I had batteries but since I'm out I couldn't take a picture this time. I'm glad I went for it anyway. I made minor changes. I used only half of the amount called for of the cayenne, I cooked the chicken and set it aside I added some sliced mushrooms to the butter, cooked it and then added the soup and about a 1/2 cup of milk. Placed the chicken back in the pan and kept an eye on it while it completed the last 10 minutes of cooking. It was great. I just thought that it needed salt and had to add some afterwords.

I won't make this recipe again. The chicken was tender, and we like all the ingredients individually (and with other things), but the flavors together in this particular recipe did not work for us.

Kathy's Southern Corn Pudding

This turned out well. It was a great addition to our Easter Dinner. I did modify this slightly though. I cut the butter to just 1/4 cup, the sugar to 1/3 cup. I sprinkled some nutmeg and a little cinnamon on it as well. Baked it in a round dish instead of the 9 x 13, at 400 degrees because that was the time for the other 2 dishes that needed to go in the oven and just kept checking on it to make sure that it wasn't burning or to check when it was done. I received various complements on it.

Good Old Fashioned Pancakes

This was such a good recipe! The pancakes come out light and fluffy, rise very well, and are excellent. I made one batch completely as is and another with a couple of my own touches.In my own batch I simply doubled this recipe, but instead of regular flour used an equal part of whole wheat flour, in doubling the butter I did a 1:1 melted butter to veg. oil mix (applesauce in place of the "oils" in the recipe also tastes very good), and in doubling the milk (I used skim milk in the original recipe), I substituted 1/2C of Half & Half for only 1/2C of the skim milk. Both ways the recipe came out excellent. These pancakes absolutely drink-up the syrup so be sure to have lots on hand. This is our new base recipe for all pancakes now. We have used this for blueberry, chocolate chip, and fruit & nut. They are all great! I now make them in advance and freeze them for quick and easy breakfasts. It only takes a few seconds in the mic. & you're good to go. Thanks so much for such a great recipe.

Blackjack Brisket

I also made a smaller version of this recipe due to the size of brisket I got. I used half a bottle of beer. I followed most of the recipe and the changes I made were very minor; such as adding 2 tbs. bourbon and also using Hickory flavored Liquid Smoke. Now after having made this I have to say that it was good but we weren't blown away by this recipe. I think that we like to have a nice rub made with a spice mixture because the flavor in this was just ok for us. The reason I am still giving it a four star rating is because it turned out moist and tasted better the next day. Maybe like others suggested, it just needed to marinate for a while longer.

Brown Bean Chowder

This is a good base and full of possibilities. I cooked the beans slightly longer than suggested. I decided that the amount of bread crumbs would make it too thick. I cut it down to 3/4 cup and it was still too much so I added more water. I didn't have plain bread crumbs but I had Garlic and Herb bread crumbs. After it was done I tasted it and thought it needed more seasoning, so I added some cumin, more chili powder, some oregano, some Cayenne pepper, 1 bay leaf and some chopped fresh cilantro. It was a lot better that way but it borders on almost too much salt (which I hadn't changed) I'm sending some to my 81 year old mother-in-law. She loves beans in any way, shape or form. :)

Indian-Style Rice with Cashews, Raisins and Turmeric

Chicken Makhani (Indian Butter Chicken)

Very good. We all enjoyed it. I didn't have lemon so I used buttermilk in it's place but followed the other ingredients and directions as stated with the exception of using the cornstarch and water, which I used the crushed cashews instead. It was excellent.

Amazingly Easy Irish Soda Bread

I have no concept of what Irish Soda Bread taste likes but I do know that this was very good. It does resemble a biscuit in a way. I added a handful of raisins to mine. I would agree that you don't need 1/4 cup of butter and buttermilk. Instead 2 tbs. should be fine. That reminds me... I didn't have Margarine so I used butter instead. Thank you for sharing this great recipe MP!

Gulliver's Cream Corn

This was good. I wouldn't say it's the best from this site based on others I've had but it CERTAINLY is BETTER than the canned stuff. I still prefer "Cream Corn Like No Other" from this site over this or some of the others made in the slow cooker. I will say that it was fast to prepare and very easy. I didn't use the Parmesan cheese like other reviewers suggested, maybe I'd give it a try that way sometime.

Cinnamon Bread I

Nice Cinnamon bread. It was more mild than I had thought it would be. I followed the recommendations of other reviewers and doubled the topping and added part to the center and followed by the remaining batter. I also separated the dry ingredients and then added those to the wet ones. The house smelled great while it was baking!
