Refried Beans Without the Refry

Phenominal! Great taste, better than most restaurants. I don't know why everyone doesn't make them like this. :-) I did add a chicken boullion cube with the water (just one) to give it an extra punch.

Zucchini Tomato Casserole

This was great! We sauteed medium chopped onion instead of dried onion with the zucchini. Then browned and drained 1 lbs of 85% lean ground beef and added in. Mixed remaining ingredients, substituting 2 cups ground tortilla chips instead of bread crumbs. Cooked in huge stainless steel bake pan. This was off the charts! Unbelieveable good! Will make again! Great for that summer zucchini and one dish meals! Awesome!

Balsamic Vinegar and Ginger Bok Choy

WOW! this was great! I had enver cooked with Bok Choy (I have had it in Chinese) before, but we got some in our CSA share this week. I made this with a bit less vinegar than called for, added in some salt and pepper and served it with a mediterranean shrimp & onion dish. It was fantastic!

Bacon Water Chestnut Rolls

WOW! These are amazing! Prep was super easy, just cut the bacon in half, wrap and bake. Made the sauce as it is written with a dash of some asian hot sauce for a kick, perfection. I did bake for 30, turn and then broil for 10 to make the bacon crispy. No need to do toothpicks until serving, just put them on the side and people can spear their own, the bacon seals it all together. I used whole water chestnuts, glorious crunch! Next time, I might marinate the chestnuts in some soy sauce & sugar for a couple hours before hand to add another dimension, but it doesn't need it!

Creamy Deviled Eggs

These are SO yummy! Made as stated, they are great - even better and better for you with these alterations: use neufatel cheese and low fat ranch, I use a bit less onion and add a tiny squirt of mustard, top half with sliced olives and half with sliced green onions then place on lettuce or spinach leaves for a beautiful presentation!

Scottish Bubbles and Squeak Patties

Wow! My 2 year old dug IN to this! I couldn't get it to stick together, so I think I will make the patties smaller and squeeze more liquid out next time - and believe me - there WILL be a next time! These were SO yummy!
