Slow-Cooked Pork Barbecue

Reviewed: Jul. 16, 2008
This was really tasty. The flavors of the Coke & barbecue sauce blended well, but I think I'll cut the Coke in half next time because the sauce was a bit thin. This was a breeze to prepare.

Maple Salmon

Reviewed: Jul. 14, 2008
I followed the recipe exactly, but thought the salmon was "just okay." Next time, i'll try grilling it or adding cayenne.

Yellow Squash Casserole

Reviewed: Jul. 7, 2008
Delicious. I've searched a very long time for my idea of a perfect squash casserole and this is definitely it!!! I am a cheese lover, so I added a bit extra to suit my taste - also added extra crumbled Ritz crackers on top. Ths will be a regular staple for Thanksgiving gatherings from now on. Even people who didn't normally go for squash seemed to enjoy it.

Texas Ranch Potato Salad

Reviewed: Jul. 7, 2008
This was terrific! I served this over 4th of July weekend for a cookout and everyone loved it. I made a few changes - first, I used 1 c. sour cream & 1 c. mayo (instead of all mayo)...I also added a cup of shredded Cheddar cheese. I personally prefer this side slightly warm or room temperature, but it's good chilled. Since I like bolder flavors, I think I will add some extra Ranch mix. I will be using this recipe on a regular basis. Thanks for sharing!!!

Waldorf Tuna Salad

Reviewed: Jun. 28, 2008
Excellent recipe. I took this to a pot luck at work and several thought it had chicken (which would be excellent also). Don't be scared by the ingredients - very delicious. I used pecans instead of walnuts.

White Chocolate Macadamia Nut Cookies III

Reviewed: Jun. 25, 2008
These were pretty good! I'm a little unsure about the almond extract. I'm going to try this recipe again with just vanilla extract and also pre-salted macadamia nuts like another reviewer tried to see if it gives them something extra. I love white chocolate macadamia nut cookies and am still searching for that "perfect" recipe.

Famous Butter Chicken

The chicken turned out really moist and the "crust" was the perfect crispness. I will definately make again.

Chicken with Asparagus and Roasted Red Peppers

Reviewed: Jun. 6, 2008
It was good but not great. I guess I had expected alot more with the high rating. I agree with another poster that the veggies would have been good as just a side dish and left out the chicken. I will probably make again with just veggies as a side dish.

We loved it. My husband who hates ranch dressing loved it, he just kept on and on about how flavorful it was. I made it exactly has listed.

Simple Tiramisu

Reviewed: Jun. 2, 2008
Great recipe. I used an entire package of cream cheese in the 8x8 dish and adjusted the other filling ingredients accordingly. I also added a layer of ladyfingers with the coffee-maple syrup in the middle of two layers of filling. I loved the fact there is no alcohol in this recipe and my guests enjoyed it also at the dessert buffet after high school graduation. Keeps well and I am having some of the leftovers (not much was left) three days later and even better now.
