Melanie's Chili

Reviewed: Feb. 23, 2008
I love this recipe! I have been making this one for years now. I picked it because it didnt have a long list of weird ingredients. Most of the time I follow the recipe exactly as written and I always make a double batch. Every now and then I will add extra chili powder. This is a wonderful, homemade, simple, and delicious chili!!

We make this in our smoker,, mesquite wood,, I can't imagine it getting any better than this,,, then my husband started putting wedges of apple and onion inside before we put it on the beer can... OMG!!!!! Use a meat thermometer since the smoking will cause the meat to be pink.. AWESOME!

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Aug. 24, 2007
I did not use the butter shortening - instead I subbed 1/4 cup butter + 1/4 cup oil. I also added more spices - extra cinnamon and cloves, plus some nutmeg. I already add allspice to most of my cookies, might as well complete the trio.

Key Lime Pie IX

Reviewed: Aug. 24, 2007
Firstly, I made it with the full half cup of key lime juice. It set beautifully. Though it did not have a strong tangy taste like I would have liked (too sweet), next time I will add more zest. I did not make the meringue and instead covered it with fresh whipped cream (not the cool whip stuff) mixed with more zest.

Jay's Signature Pizza Crust

Reviewed: Aug. 24, 2007
The crust puffed up a bit on its first shot through the oven. It made a nice crunchy pizza though, and I will not complain! My personal modification is to brush pesto on the edge of the pizza, then when the dough is rolled up to make the crust, brush more pesto on the edges. It's a scrumptious crust, far tastier than the stuffed or garlic varieties.

Exquisite Pizza Sauce

Reviewed: Aug. 24, 2007
I made a few changes - I added more cayenne and chili flakes (at least a teaspoon)and used fresh basil instead of dried plus a little fresh Italian parsely. I did not use marjoram and doubled the oregano. The resulting sauce had a wonderful flavor with a nice kick. I prefer my sauces to have a chunkier texture, so I made it a second time with fresh tomatoes added in...simply delicious. If you don't want to use fresh tomatoes, I bet canned would work perfectly - I've added them to my other sauces before.

Southern Peach Cobbler

Reviewed: Jul. 26, 2007
SO YUMMY!! Brought to a BBQ on the 4th of July and everybody loved it. My favorite was the topping,, it was like a snickerdoodle cookie. (I think somebody else on here said that too) It is so pretty and tastes awesome. I have made it twice,, the second time I put the peaches in boiing water for a few seconds and then peeled them as suggested,, and it was SO MUCH easier!!

The Perfect Hot Artichoke and Spinach Dip

Reviewed: Dec. 31, 2006
We liked it. It's not the best artichoke and spinach dip we've tried, but it is one of the better ones. My only complaint is I would've liked more "zing!" to come through from the jalepeno. The taste isn't worth the lack of heat.

Yummy Sweet Potato Casserole

Reviewed: Nov. 26, 2006
This was wonderful! My kids have lost all my measuring spoons/cups in their toy box so I had to eye ball all the measurments and i don't think it could have come out any better!! At first I was worried about the amount of topping but once we started eating it was just the right amount for a little bit in each bite. I don't peel my potatoes before i boil them,, i boil them whole in a large pot and when they are done, I just pull the skin off with my fingers,, very easy!

Garlic Cheddar Chicken

Reviewed: Oct. 3, 2006
My husband loved it, he's a garlic-aholic. I wasn't impressed with it. I thought it was a little soggy. I'll probably make again and like others have said, cut back on the butter and see if that makes a difference.
