Luscious Chocolate Truffles

Easy recipe and tasty too! After I rolled them I dipped them in melted chocolate. Half in white chocolate and the other in dark. Then I sprinkled crushed oreo cookies over the top. They were beautiful and divine! They looked like I spent a fortune at the candy store.

Pineapple Upside-Down Cake V

This recipe turned out ok, but not very moist. I used the butter recipe like suggested, but still not great. I like a lot of the brown sugar/butter topping & this didn't really do it for me.

Zucchini Brownies

A good way to use up extra zucchini, but they are definitely more cake than brownie. I made these just as the recipe says, and they turned out good, just not extra moist & dense like I want a brownie. Like other reviewers, I was tempted to add oil or eggs because the batter was so dry, but once I added the zucchini & mixed it for a minute, it turned into normal batter. With the frosting this makes an excellent cake though, and my hubby didn't even notice the zucchini.

Truck-Stop Buttermilk Pancakes

I've tried lots of pancake recipes, but none have ever been requested twice by my picky family. These are now the only recipe we make. If I don't have buttermilk, I make my own, but I pretty much just keep it on hand now because these are requested so often! I use white whole wheat flour & add 1 tsp. vanilla & they turn out great!

Shrimp and Crab Bisque

I followed this recipe to the letter- using Chardonnay for my white wine- and essentially ended up with wine soup. Terrible! It was also way too thin for a bisque. I feel if the wine was omitted or cut back to 1-2 tbs. I might have liked it. What a waste of all that beautiful seafood!

Honey Ribs

I'm re-writing my review because I made a few changes and it went from 5 stars to 10 stars. I omitted the beef broth and water, upped the BBQ and honey and cut the ribs into 3 bone pieces instead of all individual. This seemed to keep the meat much more tender, and there wasn't so much liquid. I cooked on low about 7 hours (basted from the cooking juices once), put the rib pieces in a baking pan (carefully, the bones were falling out) brushed them with a tiny bit of barbeque sauce and put them under the broiler for 4 minutes to get crispy and brown. Meanwhile, I took the liquid from the crock, added some cornstarch and simmered to make a very nice sauce for the ribs. It was so delicious!!!

Slow Cooker Guisado Verde

This was absolutely delicious!!!!!! I used chicken broth as someone had suggested and I used serrano peppers (just because that's what I had on hand). I might use less liquid next time, but that definately didn't bug me enough that I won't make it again. We will be making this a lot!!!!!!!! Thanks for the recipe!

Dad's Down Home Cornbread and Jalapeno Meatloaf

This meatloaf was awesome! Very moist with just the right amount of spice. There was a lot of fat that had to be drained but I expected that with the pork. It's perfect with a little salsa served on the side. Will definately make again! Thanks for the recipe!

Carolina Fish Cakes

Wow, after reading the other reviews maybe I did something wrong because these came out WONDERFUL for me. They are amazingly similar in taste to the filling of restaurant style "stuffed crab" or "stuffed fish". I didn't change a thing (but my potatoes were small). Good job, Becky!
